This is pesto that I made from our homegrown basil and garlic last summer. I cannot even begin to explain how nourishing and delicious this is in the middle of a snowy winter day.

🌶️ **Homemade Pickled Shish*to Peppers** 🌶️

There’s nothing more satisfying than turning your garden’s bounty into something delicious! This year is my first year at growing shish*to peppers and I thought their mild flavour would be lovely if I fridge pickled them with a few hot wax peppers!

✨ **Here’s how you do it:**
1. **Harvest & Clean:** Start by picking your shish*to peppers, then give them a good rinse.
2. **Prep the Brine:** Combine water, vinegar, salt, sugar, and your favorite spices (like garlic, dill, or mustard seeds) in a pot. Bring to a boil.
3. **Pack the Peppers:** Place your shish*tos in a clean jar and pour the hot brine over them, making sure they’re fully submerged.
4. **Seal & Store:** Seal the jar and let it cool. Store in the fridge and let them pickle for at least a week for the best flavor.

Perfect for topping salads, sandwiches, or just enjoying as a tangy snack! 🥗

Harvesting these little gems is such a rewarding experience. Whether they’re red, gold, or russet, the flavour of homegrown FRESH potatoes is unbeatable.

Sometimes I can’t even manage to wait until they’re done fully growing but a little taste partway through the summer never hurts 😉

Roast, boil, or mash – there are endless delicious ways to enjoy your fresh potatoes. My favorite? Simple roasted with a touch of olive oil, salt, and dill of course. Perfection! 🌿✨
