***Tasty Tuesday***

Weekday dinners can become very stressful when you come home from work with little energy but want to make something healthy and delicious to eat.

This one pot meal (my favourite kind of dinners!) is super simple takes about an hour.

1. Preheat oven to 400F

2. Cut 2 sweet potatoesinto small cubes and 1 pepper into chunks. Line a large baking sheet with parchment paper and add 1-2 tbsp of coconut oil. I place the baking sheet with the oil into the oven for a minute or two to melt the oil. Pull it out, add cubed sweet potatoes and pepper, stir to coat and return to oven and bake for 30-35 minutes.

Once baked, I added
2 cups of black beans
2 cups cooked rice
1 bunch cilantro, chopped
And sprinkle with cajun spice (see other post for recipe)

Stir until combined. Serve with salsa and/or avocado.

***TASTY TUESDAYS***

I was asked the other day what my go to meals were.

I don't necessarily have go to meals rather I have go to ingredients.

This rice bowl I threw together with leftover rice. I tossed it with some olive oil in a skillet and added about 2-3 cups of left over rice I had in the fridge.

I added some garlic powder, onion powder and oregano with some salt and pepper and roughly chopped a couple of tomatoes 🍅

Cooked some breakfast sausages from and avocado 🥑 and made some super fast rice bowls.

***TASTY TUESDAY***

I was cleaning out my pantry and found my waffle iron I hadn't used in years.

Thought it was time to try a new recipe.

These turned out amazing and are so easy to make.

They also freeze well and are great to have on hand for an easy go to breakfast or snack.

The vanilla protein powder make them filling and it smelled like vanilla cupcakes in my kitchen for hours after. 🧇🧁😋

I saw a comment online asking how do you buy cheap groceries in Gimli.. (or something along those lines)

I shop once a week and always make a list of the produce that is on sale 🥦🫑🍊🍋

This week I went in with a short list: tomatoes 🍅
cucumbers 🥒
Lemons 🍋
Fruit 🍌
Water (I refill 2 - 18L jugs with filtered mineral water each week. Summer time it's 3)

I was excited to see all the produce on sale at Coop today!

I came out with all the above for only $81.34

I plan to make my Bah Mi bowl (see other post for recipe)

With the lemons 🍋 I plan to do a 24 master cleanse which I will post more info at another time.

I found some really tasty Gluten free bread at costco which I will make toasted tomato and cucumber sandwiches with.

And use the eggs for random recipes like the previous tasty Tuesday and looking for a good breakfast muffin recipe... will post when I find one 😉

The oasis juice was a total impuse buy and I did not see the sulphites when I read the ingredients in the store 🤦🏼‍♀️ Oh well... it was only $2.50 and I will use it in smoothies.

I usually stock up on meat at or when something goes on sale.

Sweet potatoes that I baked the other day, 2 scrambled eggs and a large handful of cilantro.

Simple. Delicious 😋

I scrambled 2 eggs in a skillet, added some pre baked sweet potatoes from dinner and placed it on top of cilantro.

Cilantro 🌿 great liver support and detox

Sweet potatoes 🍠 Great source of antioxidants and beta carotene which is great for skin health.

2 free range eggs 🥚 Great source of protein which we all need for healthy hormones and brain function.

***TASTY TUESDAY***

Christmas would not feel like Christmas without ginger cookies.

These cookies are easy to throw together and freeze amazing.

I double this recipe to have on hand to enjoy with a cup of hot cocoa or cider.

Ginger molasses cookies

Preheat oven to 350F. Line 2-3 large baking sheets with parchment paper.

In a medium bowl whisk:

2 cups flour of choice
1 tsp baking soda
1 tsp baking powder
1 1/2 tsp ground ginger
1 tsp cinnamon
1/2 tsp ground nutmeg
1/2 tsp cloves

Set aside

Using a hand mixer or standing mixer, beat

1/2 cup coconut oil
1/2 cup maple syrup
1/2 cup molasses

Until well combined.

Slowly beat in the flour mixture.

Scoop about 1 rounded tablespoon of dough at a time and place onto prepared baking sheets and bake for 10-12 minutes.
Let cool on the pan.

Makes about 30 cookies

Hot spiced cider
————————
Who doesn’t love a cup of something warm when it’s chilly outside?
This hot spiced cider has cloves which is a digestive aid, kills intestinal parasites and is helpful for relieving abdominal pain.
A study in Denmark suggests that cloves make blood platelets less likely to stick together which could assist in preventing blood clots.
Cinnamon has antiseptic properties, is also a digestive aid that helps with nausea and will help stabilize blood sugar. Additionally, cinnamon has anticancer properties and has been shown to stop liver cancer and melanoma.
Recipe:
2 cups cider
2 cup water
3 cinnamon sticks*
1 tsp whole cloves*
3 slices of orange rounds (as shown in picture)
Place all ingredients in a small pot, bring to a boil. Lower heat to low and simmer for 20-30 minutes. Placing a small strainer over your mug, carefully pour cider into mugs. Enjoy!
Serves 2-3

For a more intense spice, grind the cloves and cinnamon sticks in a mortal and pestle first.

Vegan gluten free pomegranate scones

Pomegranates have been used to treat a variety of ailments such as:
•halitosis
•sore throat
•intestinal worms
•diarrhea
•excessive perspiration
•fevers

Parts eaten are the juice and pulp.

Seeds are edible and high in fiber

Key nutrients:
•calcium
•phosphorus
•iron
•potassium
•vitamin C just to name a few.

Recipe:

Feel free to substitute the pomegranates for blueberries or cranberries or any other flavour that tickles your fancy!

Preheat oven to 375F

Line cookie sheet with parchment paper or silicon sheet.

In a large bowl combine:

2 cups of your favorite gluten free flour blend
2 tsp aluminum free baking powder
1/4 tsp pink salt

Using a fork, mix in 1/3 cup coconut oil.

Set aside.

In a medium bowl , combine:
1 cup pomegranate seeds

1/4 cup maple syrup
The juice of 1/2 lemon
2/3 cup oat milk or non dairy milk of choice.

Mix well. Fold in wet ingredients to dry ingredients making sure not to over mix!

Using 1/4 cup, scoop the batter evenly into 12 scones.

Bake for 20-25 minutes until the scones are golden brown and a toothpick comes out clean.

Cool on cooling rack.

Vegan pumpkin bread (gluten free option)

There is nothing more comforting than a cup of tea and fresh baked bread as the days become cooler.

Pumpkin spice is a must have for fall flavours. The warming properties of cinnamon and ginger help warm the body from the inside out.

This loaf was made with light spelt flour which is a grain that is over 5000 years old.

It’s sweet nutty flavour works great with the pumpkin and pecans in this recipe.

Spelt tops wheat in amino acids, protein, minerals and B vitamins!

People with gluten sensitivity can often tolerate spelt better than any other grain.

Spelt contains all 8 essential amino acids necessary to support cell maintenance.

Spelt contains a special carbohydrate called mucopolysaccharides which stimulate the immune system!

Recipe:

Preheat oven to 350F

Oil a loaf pan with 1/2-1 tbsp coconut oil. Set aside.

In a large bowl, place 2 tbsp ground flax meal and 4 tbsp of water.

Add 2/3 cup pumpkin, 1/3 cup maple syrup and whisk until combined.

Add
•2 tsp ground cinnamon
•1/4 tsp each cloves and nutmeg
•1/2 tsp ginger
•1 tsp pure vanilla extract
•1 tsp baking soda
•1 cup ground spelt flour or ground oats

Mix well with spatula until well combine.

Fold in pecans.

Pour into a bread loaf pan coated with coconut oil

Bake for 40 minutes or until a toothpick comes out clean. Turn off oven and let cool in oven for about 30 minutes. This is the secret to this gluten free recipe. DO NOT SKIP!

Turn baking loaf tin upside down and it should fall right out.

Serves 4-6

Cajun Butternut squash soup.

As winter comes knocking on the door, warming spices like the ones found in cajun spice, stimulate the digestive fire and warm us up from the inside out.

Butternut squash is jam-packed with beta-carotene, which in greater intake levels has been linked to improved brain functioning as we age.

Beta-carotene also helps boost the immune system and supports the eyes and skin.

Recipe:

1 lbs ground meat
2 small onions, peeled and chopped

In a large stock pot, cook meat until no longer pink.

Add onions and 1 bag of compliments frozen soup mix.

Add 2 tbsp of cajun spice mix*(recipe below👇🏼)

Stir until combined. Simmer until veggies are thawed and your kitchen smells delicious 😋

Add 2 bags of compliments butternut squash. Stir until combined.

Add 8 cups of bone broth or filtered water.

Bring to a boil and then turn to low and simmer for 25 minutes.

Optional toppings: avocado

Serves 6-8

Cajun spice mix:
2 tbsp paprika
1 tbsp chili powder
4 tsp garlic powder
1.5 tsp Himalayan pink salt
1/2 tsp black pepper
1 tsp dried oregano
1 tsp dried thyme

***TASTY TUESDAY***

Tuna Buddha bowl

I am loving these buddha bowls lately. They are a simple way of including fibre into your diet.

Including 5-9 cups of veggies into your day will help stimulate peristalsis in the stomach.

You can think of peristalsis like your stomach turning into a washing machine. Your stomach walls produce hydrochloric acid which helps to break down the food into small particles that move through your digestive tract.

The faster the transition of food through the intestines will reduce gas, indigestion and constipation.

I use whatever produce is on sale and load it with colourful veggies.

I love adding cilantro as a green to my salads and bowls because of the detoxing effect.

It is a great for supporting the liver to help the body detox of heavy metals and other toxins.

It is also one of the best herbs for the adrenal glands and wonderful for balancing blood glucose levels.

I invite you to use your favourite vegetables and herbs and create your own nutrition filled bowls.
