***Tasty Tuesday***
Weekday dinners can become very stressful when you come home from work with little energy but want to make something healthy and delicious to eat.
This one pot meal (my favourite kind of dinners!) is super simple takes about an hour.
1. Preheat oven to 400F
2. Cut 2 sweet potatoesinto small cubes and 1 pepper into chunks. Line a large baking sheet with parchment paper and add 1-2 tbsp of coconut oil. I place the baking sheet with the oil into the oven for a minute or two to melt the oil. Pull it out, add cubed sweet potatoes and pepper, stir to coat and return to oven and bake for 30-35 minutes.
Once baked, I added
2 cups of black beans
2 cups cooked rice
1 bunch cilantro, chopped
And sprinkle with cajun spice (see other post for recipe)
Stir until combined. Serve with salsa and/or avocado.
