ONE POT vegan high protein chickpeas and lentils masala 🌶️🌽🧅🧄
Enjoy this high volume , high protein vegan meal as one of your next ideas for meal prep, only takes about 15 minutes and tastes absolutely delicious!
This meal is high is iron and fibre , promotes digestion, and allows you to get some whole foods in 🫶🏽
Here’s how to make it
Ingredients :
1 sliced yellow onion
5 minced garlic cloves
2 inch peeled & minced garlic
3 cubed yellow potatoes
3 cup spinach
5 small chopped tomatoes
1 can drained & rinsed chickpeas
1 can drained & rinsed lentils
1-2 cups crushed tomatoes
Masala seasoning :
1 tbsp cumin
1 tbsp turmeric
1 tsp cinnamon
1 tsp nutmeg
1 tbsp ground ginger
1 tbsp garam masala
1 tbsp chili powder
1 tbsp salt
1 tbsp pepper
Method:
1. Boil potatoes until fork tender , drain & set aside for later
2. Heat your wok (or largest pan) on medium-high heat
3. Once your wok is hot add in your extra virgin olive oil and coat the pan
4 add in your sliced onions and mix until browned
5. Add in your garlic and ginger until they become fragrant
6. Add in your chickpeas and lentils and mix together
7. Add in 2 tbsp of your masala seasoning and mix again
8. Add in your boiled potatoes along with another tbsp of your masala mix and gently mix ( you still want your potatoes to still hold some shape)
9. Add in your chopped tomatoes and corn and mix
10.Add in your crushed tomatoes & spinach and give it one last mix to combine everything together
11. Serve with your favourite side and enjoy ☺️
