Get ready with me lunch edition π₯π
I had about five minutes this morning to make myself a lunch full of veggies and protein and healthy nutrients so this is what I pulled out from my fridge and I was able to chop up. I threw it all together and walked out the door in about five minutes.
Key things I think of for every meal -is there a vegetable and is there a protein? If I keep that in mind, I usually am able to build a pretty well rounded meal.
I worked in restaurants for many years and one of my favourite things about a fancy restaurant salad was hummus in the salad. I don't know why this was so novel to me. I eat hummus literally by the gallon, but putting hummus on a salad it really gives it that restaurant zuzhh. Having some ready-made sauces like my harissa sauce and a delicious salad dressing on hand is one of my top hacks for being able to make a meal super quick and also have it be super delicious.
πAlong with protein and nutrients, joy is a really important part of food! finding things that you love, for me that that's olives, can make your meal that much more enjoyable. A lunch break is one of the few times in many people's day when we can slow down, disconnect from everything and nourish our self. Nourishment includes not just nutrients, but rest and joy as well. β€οΈππ₯
