A beautiful lunch for a tough hike and amazing view! 🥾☀️🥗

Plant-Based Burger Bowls! I’d have to argue I’m liking this more than the OG 😱😏. Sometimes I find a burger on a bun to be too dry and it’s all the other stuff that I love the most.

Start with a bed of cooked grains (farro pictured here, I also like using quinoa)
Layer on your lettuce, chopped tomatoes, and pickles (this is a must have for me)
Next comes your choice of bean burger
Top with some sautéed mushrooms and onions and your favorite burger fixings/sauce 👌🏼

I finally made Tabbouleh for the first time! ….with a twist. I added lentils which aren’t a usual part of this salad. I only left out the traditional bulgur because I didn’t have any right now. I was going to sub quinoa but out of that too! This would be a great balanced meal salad with the usual bulgur (or quinoa) plus the lentils. I love the flavors in this salad, so fresh! Don’t know what took me so long to make it at home.

Lentil Tabbouleh
(Makes about 6-8 cups)

Ingredients:
1 ½ cups finely diced cucumber
1 ½ cups finely diced tomato
½ teaspoon salt
3 cups finely chopped curly parsley (start with about 6-8 cups packed parsley with thick stems removed, then chop in food processor)
⅓ to ½ cup chopped fresh mint (start with about 1 cup mint leaves, you can chop it in the food processor with the parsley)
⅓ cup thinly sliced green onion
¼ cup extra-virgin olive oil
¼ cup lemon juice, to taste
1 medium clove garlic, pressed or minced
Options:
1 can lentils, drained and rinsed
½ cup bulgar or quinoa, cooked and then cooled

Directions:
Mix the salt with the diced cucumbers and tomatoes in a bowl. Let it rest while you’re chopping the parsley and mint.

To prepare the parsley, cut off the thick stems. Finely chop the parsley and remaining stems plus the mint leaves. You can chop by hand or in a food processor in 2 or 3 batches.

Drain any extra liquid out of the cucumbers and tomatoes. Add the chopped parsley and mint. Add the sliced green onions plus the lentils and/or cooked bulgur.

In a small measuring cup or bowl, whisk together the olive oil, lemon juice, and garlic. Pour it into the salad and stir to combine.

Serve immediately or chill it for later. Tabbouleh will keep well in the refrigerator, covered, for up to 4 days.

body image is about what happens in our mind when we see our bodies, and when we see other people’s bodies.

we don’t cure body image woes by shrinking our bodies. because again, body image is mental, not physical. the *real* work is in changing our minds & deeply held beliefs.

we better our body image when we learn to view our bodies differently - and maybe ultimately with kindness, with respect, with gratitude. we better our body image when we work on accepting our bodies instead of constantly trying to change them. we better our body image when we stop comparing our bodies to others. we better our body image when we remember we are so much more than our bodies, and that our worth & value have nothing to do with our bodies look like 💛
