Are you looking for a yummy and easy summer supper? This Sesame Salmon Bowl is sure to please!
4 salmon fillets
Jasmine rice, cooked
Snap peas, julienned
Bell pepper, julienned
Carrot, shredded
Mushrooms, sliced
Spinach, rough chopped
Cauliflower rice
sesame ginger dressing mix, Teppanyaki sauce mix and sesame crunch topper
-Prepare Teppanyaki sauce as directed.
-Prep all veggies
-In a small bowl, combine 1 tbsp sesame ginger dressing mix with 1 tbsp each soy sauce, honey, oil, miso paste and rice vinegar.
-Preheat oven to 400°
-Line a sheet pan and place salmon on pan. Brush with sesame ginger sauce. Bake for 15 min, brushing with sauce again half way through.
-Heat 1 tbsp oil in a frying pan and add mushrooms and spinach. Cook until moisture cooks out of the mushrooms and spinach wilts. Add cauliflower rice and a splash of soy sauce. Cook until starting to brown.
-Assemble bowls. Add rice, cauliflower rice mix, and veg. Top with salmon and a drizzle of Teppanyaki sauce. Sprinkle with sesame crunch!
