Soup of the summer: Gazpacho 🍅

Cold Spanish soup that’s so delicious, healthy, and easy to make - just throw the ingredients into a high speed blender and it’s done.

Plus it’s one my best ways to get my toddler to eat veggies - she loves it!

✨ Gazpacho ✨

6-7 medium extra ripe tomatoes on the vine
1 green pepper, seeds and core removed
1/2 cucumber, peeled
1/2 small white onion
1-2 cloves garlic
1 tbsp sherry vinegar
1/2 tsp salt
1/4 cup extra virgin olive oil, added slowly
1-2 hard boiled eggs, chopped (to add on top)
1/2 cucumber, diced (to add on top)

🍅 Add all ingredients into the blender except olive oil & toppings. Blend well.
🍅 Pour in the olive oil slowly until well emulsified.
🍅 Cool in fridge for about 30 minutes before serving.
🍅 Option to chop hard boiled egg and cucumber to add on top of soup. Drizzle with olive oil.

Acorn Squash Bowls 🧡🍂

So satisfying and comforting. Roasted acorn squash stuffed with beets, kale, feta, crispy chickpeas and a honey-lemon dressing. Add some protein like grilled chicken or salmon for a more balanced meal.

What I ate (& drank) in Portugal 🇵🇹

1- Local cheeses, charcuterie meats, spreads & bread. This platter was prepared by a private chef we hired for the evening. Delish!

2- Aperol spritz was the drink of the trip. The hot, dry Portuguese sun made a refreshing spritz exactly what we needed ☺️

3- Salada de polvo (octopus salad) served cold. Tender octopus with onions, peppers, olives in a tangy vinaigrette.

4- Grilled octopus 🐙 with sweet potatoes. The Portuguese sure know how to do octopus right.. cooked perfectly tender and lightly charred 👌🏼

5- Just a ton of seafood. Oysters, clams, mussels in curry sauce, tuna and salmon tartare. All the seafood here was outstanding.

6- Negra Mole grape variety native to the Algarve, the south region of Portugal. This grape variety is the only one that can ripen in both green or red grapes on the same vine. It tastes so sweet, right off the vine, and produces a juicy, summer red wine 🍷

7- Many, many bottles of wine 😉 Pretty much every bottle of Portuguese wine we tried was good, at very affordable prices. Love that for us.

8- Figs! Fig trees grow all over Portugal and lucky for us they were in season, brimming with ripe figs. You could just grab them off the trees for a convenient little snack ☺️ Pictured is a juicy ripe fig from a fig tree growing on top of a castle we visited near Albufeira.

9- Chicken Piri Piri, a classic Portuguese dish. Chicken marinated in a spicy, tangy sauce made from piri piri chili peppers 🌶️, garlic, lemon, olive oil and other spices.

10- Honest Greens Poke Bowl. After 9 days of traveling (eating minimal vegetables), I was craving something fresh & green. Definitely hit the spot 🤤

On the menu this weekend:
⭐️ Grilled chicken Caesar salad
⭐️ Shrimp fried rice with snow peas
⭐️ Pan-seared wild salmon on whole wheat couscous salad

Summer Roll SZN 😋

Use rice paper wraps as a vehicle to eat more fresh fruits and veggies. And they make the perfect picnic snack 🧺

Some of my fav combos to try:
⭐️ Rainbow: Shrimp, Boston lettuce, cucumber, purple cabbage, red pepper, mango, cilantro, chives
⭐️ Light & Fruity: tofu, strawberry, avocado, cucumber, Boston lettuce, mint

For a dip, I love to make a Lemon-Maple-Tahini sauce. Simply combine 1/3 cup tahini, 1/4 cup lemon juice, 2 tbsp maple syrup, lemon zest, touch of salt, and a few tbsp of water, depending on how thin you prefer.

Just over here sitting here on my kitchen counter 👋
The kitchen is my happy place, where cooking is therapy for me.

As a dietitian, I work with clients in and out of the kitchen to build healthy habits and a way of eating that suits their lifestyle.

One thing is for sure, which I tell all my clients: cooking at home👩🏼‍🍳 is one of the best things you can do for your health. For the following reasons:

⭐️ You DECIDE what ingredients to use, leading you to eat more whole foods and less processed foods.
⭐️ You’re more AWARE of the food you eat and how it makes your body feel.
⭐️ You LEARN how to prepare food and about what combinations of flavours and textures you prefer.

I love eating out just as much as anyone else, but the fact is, restaurant food (or takeout) is usually higher in sugar, salt, and fat because this is what makes food taste good.

Take control of your health by cooking at home more often. Save restaurants for special occasions 🥂

💥 New Guidelines for Remission of Type 2 Diabetes 💥

Over the last year, I had the honour to work alongside experts in the field of diabetes research. With new research showing that Type 2 Diabetes can be put into remission, we created this User’s Guide for Diabetes Remission using a low calorie diet approach.

Swipe to see the figure I created to visually outline the 3-phased low-calorie diet approach. Health care providers can use this resource to outline the level of commitment required by a person and to help support early conversations about whether or not this approach is right for them.

While it certainly isn’t for everyone, it is empowering to know that people with T2D have more control over their disease.
T2D is no longer a chronic disease!
