Massive thanks to my sister Jane and my dad Dave for their help at the Royal Winter Agricultural Fair last week. Our booth gets a lot of traffic and we gave out about 4000 samples, each time with a spiel about the differences between birch syrup and maple. Jane and Dave were great at it and we're very grateful for the help!

In 2009 we started experimenting with growing Shiitake mushrooms in birch logs. The initial inoculation wasn't very successful but in 2010, with a new batch of smaller logs, we grew a lot of mushrooms. Yesterday I went to have a look at the stack out of curiosity and found a couple small Shiitakes growing. It's surprising that the mycelium is still alive inside these nearly completely rotten logs; pretty resilient stuff.

1st International Birch Sap and Syrup Conference.
This past weekend I travelled to Paul Smith's New York, in the Adirondacks to learn more about birch syrup production, speak with other producers and exchange ideas. It was a terrific event with great speakers and I learned a lot about how people are processing birch sap for various finished products.

I'd really like to know what people think of this. The media can easily get carried away when reporting on such food trends so I'm curious to know if there is genuine interest here, in Canada. There has been a lot of talk this winter about birch sap being the next big thing.

Several years ago a friend of ours made birch wine with sap from our sugarbush. It's been a while since I opened one of these and we enjoyed it tonight. I tested the alcohol content and it's approx. 12% as you can see from the refractometer picture.

We're proud to announce that we've received our second Premier's Award for Agri-Food Innovation Excellence. We're being recognized for our reverse osmosis filtration and mobile sap tank/pump system that has greatly improved the efficiency of our operation. It was a great morning though it was unfortunate that we were the only recipients to have made it due to the weather.
