It’s time for spring cleaning! 🌷🌱🧹🧽🍝

I’m focusing my efforts on my pantry this year and as always leaning towards cleaner products for my family. Catelli Smart provides the same great taste and texture as their classic pasta but with double the fibre. I feel great about the all natural minimalist ingredient list when boiling up a pot for my family who can’t tell I’ve switched out the classic pasta for Catelli Smart. It feels great to stock my pantry with this All-Natural Canadian pasta because it is locally made and has been for over 150 years!

Fun Fact: My little one thinks that muffins and cupcakes are the same thing. I’m winning at being a mom with this high fibre muffin.

I can’t take full credit for this recipe. The original recipe belongs to my mom who baked these nourishing muffins almost weekly. I loved them growing up and they are and always will be a family favourite.

I made a few adjustment to veganize them and boost the nutrient levels but they are almost identical to what she would make. I don’t know about you but we love BRAN in this house!

Sticky Tal Chikki

Makar Sankranti is traditionally known to be a time for new beginnings. Sesame seeds (tal or til) are held in high regard in the Indian culture as they are very high in nutritional value. Sesame seeds are warming to the the body, helps to control blood sugar, and also strengthen bones. The tiny seeds are loaded with calcium, iron, and magnesium.

Sesame seeds represent immortality and are offered to loved ones during these celebrations to bless them with a long life dedicated to Divinity. When sesame seeds are consumed the body emits Sattva. It’s considered to be one of the most favourable foods for people who want to attain higher consciousness. Pretty cool right?!

Masala creamed corn is my favourite way to have corn. The spicy earthy notes from the mustard are a great compliment to the sweet corn. Ginger and chillies warm my body. I feel cared for in a way that no other fast food could.

Today after I sent my baby off to school I prepared this simple brunch for myself and I’m feeling wonderfully nurtured. Paired with avocado on seed toast with all my favourite fixings.

Watercress is a leafy green vegetable that’s often consumed raw. It’s used sparingly like a herb in salads and side dishes. Watercress has bitter notes that can be mild or extra hot depending on the season harvested.

Watercress can be quickly stir fried or blanched and served with butter. Watercress pairs well with with citrus fruits, starchy winter veggies, and nuts/seeds. They serve well with mustard and other leafy herbs and greens.

Watercress has a long history of being used medicinally and although it is a leafy green vegetable it’s often used like a herb. Watercress has been used to treat iron deficiency and because it’s high in iodine it’s often eaten raw to maintain healthy thyroid levels.

100 Days of Flavour

This special was something I started in April of last year. I committed to posting daily but I really wanted to commit to higher standards on my page and offer education about ingredients in a meaningful way. I didn’t want to leave this project without finishing it so I’m continuing the same project this year! With only about 12 more special ingredients to go and perhaps many more!

Today’s flavour is watercress! I made this simple puréed soup with minimal ingredients so that the flavour of this leafy green can shine brightly. I have a whole post dedicated to watercress coming up later today but for now here’s the simple soup recipe.

Coconut watercress soup

4 cups wilted watercress
1 can coconut milk
1 tbsp miso
1/4 tsp Hing
1/2 tsp cracked pepper
1/4 tsp nutmeg powder
Salt to taste
2 tbsp extra virgin olive oil
A generous squeeze of lemon

Method:

Blend all the ingredients together until smooth.
Heat until the soup begins to simmer and serve hot!
Top with lemon as desired
