🔥🍗 Chicken Bombs (Bacon-Wrapped Jalapeño Chicken!)

These Chicken Bombs are juicy, cheesy, smoky, spicy, and wrapped in BACON.
Basically… a flavor explosion. 💥😋
🛒 Ingredients
5 boneless, skinless chicken breasts (makes ~10 bombs)
5 jalapeños, sliced lengthwise & cleaned
20 slices bacon
4 oz cream cheese, softened
1 cup Colby Jack or cheddar cheese, shredded
Salt & pepper to taste
1 cup BBQ sauce (Sweet Baby Ray’s recommended)
👩🍳 Directions
1️⃣ Prep the Chicken
Slice each chicken breast in half horizontally (like a bun). Pound to ¼" thickness. Season with salt & pepper.
2️⃣ Stuff the Peppers
Mix cream cheese + shredded cheese. Spread ~1 tbsp into each pepper half.
3️⃣ Assemble the Bombs
Place each filled pepper cheese-side down on a chicken piece and wrap tightly.
Wrap each chicken bundle with two slices of bacon, fully covering it.
4️⃣ Grill Method (Best flavor!)
Preheat grill to 350°F (indirect heat).
Cook 30 minutes, turning every 5 minutes and basting with BBQ sauce each turn.
5️⃣ Oven Method
Bake at 400°F for 20 minutes (no sauce yet) to help crisp the bacon. Flip once.
Reduce heat to 375°F, drain excess fat, coat with BBQ sauce, and bake until chicken is cooked.
Finish under the broiler to caramelize the sauce.
Serve hot… try not to eat them all yourself. 😅🔥
