🌿🍗 Garden Chicken Supreme (Fresh, Colorful & Full of Flavor!) 🍗🌿
This dish is like a garden on your plate! Juicy herb-rubbed chicken nestled in a rich tomato veggie sauce—bright, hearty, and perfect for a wholesome dinner 🌈✨
🛒 Ingredients (Serves 4)
4 chicken breast fillets 🍗
1 tsp each dried basil, rosemary, sage & thyme 🌿
2 cloves garlic, finely chopped 🧄
2 onions, chopped 🧅
2 zucchini, chopped
1 red, 1 green & 1 yellow pepper, sliced 🌶️
6 tbsp olive oil
400g (14 oz) can chopped tomatoes 🍅
Salt & pepper to taste
2 tbsp fresh parsley, chopped
Fresh basil leaves (for garnish) 🌿
👩🍳 Method
1️⃣ Rub chicken fillets with the dried herbs.
2️⃣ Heat 2 tbsp olive oil in a large pan. Add chicken and cook for 8 minutes, flip and cook another 5 minutes until golden. Remove and keep warm.
3️⃣ In the same pan, add remaining oil, onions, garlic, zucchini, and peppers. Cook for about 10 minutes until softened and fragrant.
4️⃣ Stir in chopped tomatoes (with juice), season with salt and pepper, and bring to a simmer.
5️⃣ Cover and cook for 10 minutes to let the flavors blend.
6️⃣ Stir in fresh parsley, then place chicken back on top. Cover and simmer another 10 minutes until chicken is fully cooked and juicy.
🍽️ Serve & Enjoy
Garnish with fresh basil and serve over rice, couscous, or even wild rice for something a little different 😍
