We made this delish recipe with some substitutes. It was pretty easy to make. For our version of the recipe we replaced chicken for firm tofu and swapped the white rice noodles for quinoa! We also left out lemon grass cause well we couldn't get any here...but it was still a big hit! Thanks Jada for the recipe!

Happy Monday Folks! since today is (promotes regularly choosing vegetarian options for dinner on mondays) I thought it was fitting to share a variation on beans and rice.
I made this salad twice last week, for my salad I used only 1/2 cup quinoa, omitted the salt and added chickpeas, cucumber and tomato. It was a hit!

Hello friends! I haven't shared in a while as I have been working in the public sector as a Clinical Dietitian. I thought it would be wonderful to repurpose this page to promote healthy eating and lifestyle. (i am no longer working as private clinician but I am happy to continue sharing good nutrition resources!)

So lets start 2018 with a great vegetarian dish from the wonderful source Oh She Glows. A friend shared this recently and it is a great alternative for chicken salad!
