DELICIOUS COCONUT DAHL:
4 cups coconut milk
3 cups cooked lentils
4 tomatoes
2 onions
1.5 head garlic
1 ginger
1 turmeric
1 lemongrass
3T tamarind
1T salt
4 lime leaves
10 tej patta (indian bay leaves)
7 cardamom pods
2 tsp whole cumin, whole mustard seed, coriander, paprika, kasoori methi, sumac
2 cups spinach
1/2c cilantro
Wash lentils thoroughly until water is no longer really foamy, then soak overnight
Part-fry most of: onion, then garlic, then turmeric/ginger/lemongrass in plenty of oil
Add coconut milk, lentils, tomato and onion; bring to boil and keep on simmer
Add tamarind, salt, lime leaves, tej patta, cardamom pods
Separately part-fry the rest of the onion, then garlic, then turmeric/ginger/lemongrass in plenty of oil
Lower heart to medium-low, add cumin, mustard seed, coriander, paprika, kasoori methi, sumac
fry 3 -5 minutes, then add/combine with rest and simmer all until desired texture
3 minutes before serving, add spinach and cilantro
