Salmon Sushi Bake!
You should use sushi rice but I didn’t have any so just used what I had which is Jasmine rice. This will not stick together like sushi rice will but we still love it regardless!
1 1/2 cups of water
1 cup of rice
Cook according to instructions.
Salmon-I use 2 medium sized fillets for and 8x8 pan for 4 people.
-Spread olive oil on the salmon.
-Sprinkle with garlic salt, onion powder, and chili powder to your liking.
-Air fry at 400° for approximately 10 minutes, depending on the thickness of your fillet.
Take out your seaweed. You can use nori sheets or seaweed snacks.
When salmon is done, take it out and flake it or slice, whatever you prefer.
When rice is done, remove from heat, add about 1, 1 1/2 tbsp of rice vinegar, 1-2 tbsp of sugar (I used coconut sugar), and garlic salt. I just sprinkle some on top.
Mix gently as to not make rice mushy.
-Add the rice to an 8x8 baking dish.
-Press it down to pack it firmly.
Place the seaweed on top covering the surface of the rice. You may need to cut it.
Cover the seaweed with your salmon.
Drizzle some sauce on top of the salmon.
Sauce:
1/4 cup of coconut aminos or soy sauce
1 tbsp or more of raw honey
Minced garlic, 1 clove
1 tsp of mustard powder
1 tsp of ginger powder
Mix well and adjust to taste
Put back in air fryer for 4-5 minutes to warm up and mend together.
Take it out.
Add sliced cucumbers (optional)
Add sliced avocado
Drizzle more sauce
Slice into 9 squares and serve.
You may want to double this recipe because it goes quickly!!! Use a bigger baking dish if you decide to double!!
*Another sauce you can use on top is plant based mayo and honey. Regular mayo with egg doesn’t seem to work as well. For a spicy touch, add chipotle or hot sauce and mix!
Roughly 1/3 cup of mayo and 1-2 tbsp of raw honey. Add more to your liking.
Slowly add in your hot sauce to your spice level!
