I am extremely passionate about creating healthy food and fresh juices for my family, friends, and anyone else who wants to join me on this journey! It is very important to me to get these boys on a strong, healthy start while they are young! I usually look to see what ingredients I have, and then do some research on the internet to find some recipes! I always have to alter them because 2 of us have food allergies and sensitivities to gluten, dairy, and soy...and a list of others. This lifestyle is a blessing in disguise as it just forces us to eat nothing but Goodness!!! I hope you enjoy my recipes and feel free to share some of your favorites here as well! I don't use a lot of measurements...I just kinda go with what I have and guess, so I'll try to be as accurate as I can when writing these recipes! You may like it different...thicker, thinner, add something, substitute another....it's all up to you! Salmon Sushi Bake!

You should use sushi rice but I didn’t have any so just used what I had which is Jasmine rice. This will not stick together like sushi rice will but we still love it regardless!

1 1/2 cups of water
1 cup of rice
Cook according to instructions.

Salmon-I use 2 medium sized fillets for and 8x8 pan for 4 people.
-Spread olive oil on the salmon.
-Sprinkle with garlic salt, onion powder, and chili powder to your liking.
-Air fry at 400° for approximately 10 minutes, depending on the thickness of your fillet.

Take out your seaweed. You can use nori sheets or seaweed snacks.

When salmon is done, take it out and flake it or slice, whatever you prefer.

When rice is done, remove from heat, add about 1, 1 1/2 tbsp of rice vinegar, 1-2 tbsp of sugar (I used coconut sugar), and garlic salt. I just sprinkle some on top.
Mix gently as to not make rice mushy.

-Add the rice to an 8x8 baking dish.
-Press it down to pack it firmly.

Place the seaweed on top covering the surface of the rice. You may need to cut it.

Cover the seaweed with your salmon.

Drizzle some sauce on top of the salmon.

Sauce:
1/4 cup of coconut aminos or soy sauce
1 tbsp or more of raw honey
Minced garlic, 1 clove
1 tsp of mustard powder
1 tsp of ginger powder
Mix well and adjust to taste

Put back in air fryer for 4-5 minutes to warm up and mend together.

Take it out.
Add sliced cucumbers (optional)
Add sliced avocado
Drizzle more sauce

Slice into 9 squares and serve.
You may want to double this recipe because it goes quickly!!! Use a bigger baking dish if you decide to double!!

*Another sauce you can use on top is plant based mayo and honey. Regular mayo with egg doesn’t seem to work as well. For a spicy touch, add chipotle or hot sauce and mix!
Roughly 1/3 cup of mayo and 1-2 tbsp of raw honey. Add more to your liking.
Slowly add in your hot sauce to your spice level!

The Deconstructed Black Bean Burger Salad!!! 🤤 😋
We had burgers last night with leftover patties so this was tonight’s dinner!! So good and obviously healthy!!!
I added quinoa to it so make your quinoa, heat up your patty on a cast iron skillet or pan, grill some red onions, and make the chipotle mayo sauce. (Vegan mayo, raw honey, and chipotle sauce to your spice level and liking)!!
Layer your bowl with lettuce, tomatoes, grilled onions, quinoa, chopped black bean patty, and chipotle mayo sauce!

I want to go a step further and ban all big corporations that have known this and clearly don’t care about making us sick with their ingredients. STOP BUYING THEIR FOODS AND PUT THEM OUT OF BUSINESS!!!!! This is ridiculous! They shouldn’t get a slap on the hand, make some ingredient changes, and continue to make billions. They have deceived us and we need to “break up” with them for good! This is what we would do if anyone else has hurt us. They don’t deserve to keep making billions. Buy from companies who are honest and use healthy ingredients. I don’t care if it’s your child’s favorite food. Teach them, explain to them, and make them understand that this is wrong!! I did for my kids and they get it!!! Yours can too!!!
No more big corporations poisoning our foods. Put a stop to it by not buying their products ever again. If you truly care and want to make a change, then do it. You work hard for your money, so stop poisoning yourself and your family.

This is my favorite juice!
I used 2 big carrots (I would’ve used 4 if I had more), 2 apples, and a 2 inch chunk of ginger root!! Peel all and put through your juicer! I love ginger and it’s spiciness!!!! Use less if you need to!

Cauliflower Quinoa Bowl!!

Preheat oven to 400°
Prepare 2 cooking sheets with parchment paper. One for cauliflower, the other for asparagus.
Cut cauliflower into bite-size florets. Drizzle with olive oil. Coat florets and then add sea salt, onion powder, and garlic powder to your liking. Mix well to make sure all pieces are coated. Place on cooking sheet.
Prepare asparagus the same way. I just used a drizzle of olive oil, sea salt, and garlic powder. Mix well. Place on the other cooking sheet with parchment paper.
I have a double oven. If you don’t, place the asparagus in first. After about 5 minutes, put the cauliflower in. Bake for 12 minutes. Once the timer goes off, broil the top for about 8 minutes or until a little golden brown on the top. Keep an eye on the asparagus and remove when they look done.
After you set the 12 minute timer, cook your quinoa according to directions. Only takes 15 minutes!
While the quinoa is cooking, slice up some onions, mushrooms, and garlic. As much or as little as you like. I love them so I tend to add a good amount.
Add about a tbsp or so of olive oil to a pan (I use a cast iron). Once heated, add the mushrooms, onions, and stir. Add the garlic when the mixture is almost cooked to your liking.
While that’s cooking make the sauce. I’m not sure of the exact measurements, but I mix vegan mayo with raw honey. Stir and taste until you like it! Too sweet? Add more mayo. Not sweet enough? Add more honey. It’s always best to add a little at a time and taste. We keep it like this for the people in our family that don’t like spice. After I use it for them, I add chipotle sauce or Shinedown Mango Habanero sauce to your level of spice!!!! Again, add a little at a time and taste.
Once everything is cooked, put it all together.
Add quinoa in a bowl, then add the mushroom mixture, then the asparagus (you can leave them long or cut up. I did both). Add the cauliflower florets and drizzle the sauce on top!!!!!
Oh my!! My mouth is watering right now!! We all love this recipe! SO GOOD and obviously SO HEALTHY!!!!! 🤤 😋
