Cauliflower Quinoa Bowl!!
Preheat oven to 400°
Prepare 2 cooking sheets with parchment paper. One for cauliflower, the other for asparagus.
Cut cauliflower into bite-size florets. Drizzle with olive oil. Coat florets and then add sea salt, onion powder, and garlic powder to your liking. Mix well to make sure all pieces are coated. Place on cooking sheet.
Prepare asparagus the same way. I just used a drizzle of olive oil, sea salt, and garlic powder. Mix well. Place on the other cooking sheet with parchment paper.
I have a double oven. If you don’t, place the asparagus in first. After about 5 minutes, put the cauliflower in. Bake for 12 minutes. Once the timer goes off, broil the top for about 8 minutes or until a little golden brown on the top. Keep an eye on the asparagus and remove when they look done.
After you set the 12 minute timer, cook your quinoa according to directions. Only takes 15 minutes!
While the quinoa is cooking, slice up some onions, mushrooms, and garlic. As much or as little as you like. I love them so I tend to add a good amount.
Add about a tbsp or so of olive oil to a pan (I use a cast iron). Once heated, add the mushrooms, onions, and stir. Add the garlic when the mixture is almost cooked to your liking.
While that’s cooking make the sauce. I’m not sure of the exact measurements, but I mix vegan mayo with raw honey. Stir and taste until you like it! Too sweet? Add more mayo. Not sweet enough? Add more honey. It’s always best to add a little at a time and taste. We keep it like this for the people in our family that don’t like spice. After I use it for them, I add chipotle sauce or Shinedown Mango Habanero sauce to your level of spice!!!! Again, add a little at a time and taste.
Once everything is cooked, put it all together.
Add quinoa in a bowl, then add the mushroom mixture, then the asparagus (you can leave them long or cut up. I did both). Add the cauliflower florets and drizzle the sauce on top!!!!!
