What:
Meatballs :
1 lb. ground turkey
1 tsp sesame oil
1/2 cup bread crumbs
1/2 tsp ground ginger
1 egg lightly beaten
1 tsp minced garlic
Sauce:
1/3 cup hoisin sauce
1/4 cup rice vinegar
1 tbsp honey
1 1/2 tsp. sesame oil
1 tsp. minced ginger
1/4 cup low sodium soy sauce
1 tsp sriracha
1 tsp chili garlic paste
Veggies:
1 medium onion
1 tsp minced garlic
8 oz mushrooms, sliced
1 cup broccoli florets
1 cup cauliflower florets
1 cup baby carrots, cut in half
1 tbsp arrowroot powder or cornstarch
How:
1) Preheat oven to 375°F.
2) Combine ground turkey, sesame oil, bread crumbs, ginger, eggs, and minced garlic, mix until combined.
3) Scoop turkey mixture into 1 1/2" balls - I used a cookie scooper! Cook for 20-22 minutes or until meat has reached internal temperature of 165°F.
4) While meatballs are cooking, combine hoisin sauce, rice vinegar, honey, minced garlic, sesame oil, ground ginger, soy sauce, and sriracha sauce, put aside.
5) In large skillet over medium heat, warm 1tbsp of oil, add onions and garlic, cooked 2-3 minutes, add mushrooms cook another 2-3 mins, add remaining veggies sauté everything for 5 minutes adding a little bit of the sauce, water or stock if veggies begin to stick.
6) Add enough water or stock to deglaze pan, add meatballs and sauce to skillet, bring to a simmer.
7) Mix 1/4 cup of water with 1 tbsp of arrowroot powder or cornstarch, add to skillet, mix well, let simmer on low, 3-5 minutes, or until sauce thickens.
🍴Serve over rice or noddles, sprinkle with sesame seeds and green onions for garnish. Enjoy !
