💙 VANILLA BLUEBERRY CHIA PROTEIN PUDDING 💙​​​​​​​​​​​​​​​​​​(v, df, grain-free/gf, paleo, keto options & RSF)

I absolutely love this chia pudding. It tastes great, looks pretty, and just so happens to be packed with micronutrients (vitamins, minerals, antioxidants), fibre, healthy fats, and plant-based protein, too. Doesn’t get much better than that!

Blueberries are bursting with flavour & nutrition. They are packed with amazing phytonutrients, vitamins, minerals, and fibre. They get their deep blue hue from anthocyanins, which are powerful antioxidants. In fact, blueberries contain among the highest antioxidant capacities of all the commonly consumed fruits & vegetables.

Some days, I want full-on sweet or full-on savoury for my first meal of the day. Today I felt like a bit of both and this fresh and delicious cottage cheese brekkie bowl hit the spot. Bonus is, it was super quick & easy to make and packed with micronutrients (vitamins, minerals & antioxidants), healthy fats, fibre, and approximately 30 grams of protein!

These oats deliver that luscious peachy creamy goodness we all love along with loads of micronutrients, probiotics, fibre, healthy fats, and protein, too!

Note: I used vegan creamer and Greek yogurt for a wonderfully thick and creamy consistency. However, you can substitute canned coconut milk (or nut-free milk) and your yogurt of choice and simply adjust amount to desired consistency.

I’ve seen some pumpkin posts on IG this week. Now I love fall flavours as much as the next food blogger, but I’m sooooo not ready to go there yet. I’ll be over here savouring the local stone fruit, wild blueberries, zucchini, melon & field tomatoes for as long as possible.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
This simple summer recipe works for brunch, lunch, or dinner, and the ingredients are key. I highly recommend using fresh ripe local tomatoes, good kosher salt, and a high-quality extra virgin olive oil such as .
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Directions (swipe for step-by-step 📸):
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1️⃣ Preheat oven to 400F & line a baking sheet with parchment.
2️⃣ Cut rounds out of the tops of the tomatoes and hollow out enough to hold an egg.
3️⃣ Place on prepared baking sheet, drizzle with EVOO, and sprinkle with kosher salt & pepper.
4️⃣ Bake for 10 min then remove from oven and crack one pasture-raised egg into each tomato.
5️⃣ Sprinkle with more s&p and bake for another 15 to 20 min, or until desired level of doneness. Option to top with diced green onion & grated Parmesan (dairy or dairy-free) or crumbled goat cheese and broil for a minute or two.

Serve with a drizzle of EVOO, S&P, microgreens, toasted pumpkin seeds, and homemade guacamole (I used grilled avocado here — see recipe OTB!) or your choice of toppings.

Chia seeds have a mild nutty taste & are extremely nutrient-dense. A 2 Tbsp serving contains 4 g of protein & 12 g of carb, of which 11 grams are actually fibre! I happen to like the texture of chia pudding, but for those of you who aren’t fans, this recipe works well BLENDED, too!
