Because you asked for it here is the recipe for the Ted Lasso Shortbread that we had at the clinic last week.
Ted Lasso Shortbread (Old school Mix Method)
>1 cup unsalted baking or European butter (82-84% fat), room warmed to be soft
>2/3 cup granulated sugar
>1 teaspoon vanilla extract
>3/4 teaspoon sea salt or kosher
>2 cups all-purpose flour (or 1 cup Spelt & 1 cup all-purpose flour)
Instructions:
1. Preheat Oven to 325°.
2. Whip the butter either with fork (old school) or with a stand/hand mixer with paddle attachment Add the sugar, vanilla and salt and mix till light and creamy. Add the flour and mix on low until a crumbly but adherent dough is formed. Do not overmix.
3. Use the butter wrap's left over butter to grease the inside of a 8"x8" baking pan. Add a parchment paper oversized to the inside of the baking pan.
4. Add the dough to the prepared baking pan. Press it down until it evenly fills the pan. Place a piece of plastic wrap on top and use the back of a spatula or glass to roll out the top of the dough.
5. With the dough covered place it in the refrigerator for 30 minutes.
6. Bake until the surface and edges are golden brown, about 30-35 minutes.
7. Cool on a wire rack for 5 minutes. Cut the biscuits while still hot.
8. Lift out the cooked shortbread using the parchment paper.
