Homemade Pizza Rolls Recipe —perfect for school lunches or as a snack my daughter can re heat for herself.

My 7 year old daughter makes these on her own now, but I still slice the rolls.


Homemade Pizza Rolls Recipe

Prep Time: 15 minutes
Cook Time: 12–15 minutes
Makes: About 12 rolls



Ingredients:
• 1 ball frozen pizza dough (tip: leave to thaw in a plastic bag for a few days in the fridge, much easier to roll out).
• 1 cup shredded mozzarella cheese
• ½ cup mini pepperoni or chopped regular pepperoni or 1 cup chopped frozen then thawed meatballs *
• ½ cup pizza sauce (plus extra for dipping)
• 1 tsp Italian seasoning (optional)
• ¼ tsp garlic powder (optional)
• 1 tbsp oil
• Grated Parmesan and red pepper flakes (optional)



Instructions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
2. Roll out the dough into a rectangle (about 9x13 inches). No rolling pin, use your hands.
3. Spread pizza sauce evenly over the dough, leaving a small border around the edges.
4. Sprinkle cheese, pepperoni/meatballs, Italian seasoning, and garlic powder over the sauce.
5. Roll the dough tightly from the long side, like a jelly roll. Pinch the seam to seal.
6. Slice into 1-inch pieces and place them cut-side up on the prepared baking sheet. Refer to the video on how to cut even slices.
7. Brush tops with olive oil and sprinkle with Parmesan if using.
8. Bake for 12–15 minutes, or until golden brown and bubbly.
9. Serve warm with extra pizza sauce for dipping.

❄️Freeze for up to 3 months. I re-heat them for a few minutes on low in the air fryer before packing into the school lunch but they can be packed into the school lunch straight from the freezer.

*meatballs are higher iron choice.

I am always on the hunt for high-fibre products for me and my 7 year old.

Today’s breakfast features a English muffin that has 5 grams of fibre per muffin.
That’s the highest I have seen on the market.

After examining the ingredient list, I see that it’s a mix of different fibre sources that means this product is providing soluble and insoluble fibre.
Yeah 🎉.

My 7 yo chose these as her toppings today.
The English muffin was non negotiable but the toppings were up to her.

Power Pudding is a 3-ingredient, instant pudding recipe perfect for school lunches.The power ingredient is soft tofu.

Soft tofu contains iron, protein and other key nutrients: fibre, calcium, zinc, B vitamins and isoflavones (an antioxidant).

Ingredients
-1 package instant pudding, any flavour
-1 small package (300 grams) soft or silken tofu
-1 cup milk alternative

Directions

-Blend together using a food processor or blender
-Store in the fridge for up to 5 days

✨involve your child by having them pick out the flavour of pudding they want to try and make it with them. Encourage them to lick the spoon.

5-Minute Spanish eggs or “Huevos Rancheros”.Whenever I see pre-made fresh salsa or pico de gallo 50% off at my local shop, this is what I make. Easy directions 1. Heat 1 tbsp oil in a frying pan.2. Fry 2-3 tbsp fresh salsa for 2-3 minutes. 3. Add 1-2 whole or scrambled eggs.4. Cover with 1/2 cup shredded cheese. -If using whole eggs, cover with lid until yolk cooked to your liking. -If using scrambled eggs, gently stir until cooked through.Do you like while eggs or scrambled eggs? ——

This week when my child had a high fever, she lived off of this recipe (below).Instant pudding is a staple to keep in the cupboard for days with your child is unwell or for school lunches as an alternative to yogurt.

The best thing about it tastes sweet n’ creamy meanwhile it’s simple to make, and contains protein, fat, carbohydrates and some key nutrients to help nourish their growing body.Yes it contains sugar, and that’s ok. So do yogurt drinks and many other nourishing foods.For fun, I topped the vanilla pudding with canned whip cream and sprinkles. I also had many spoonfuls of this along the way.

Ingredients
1 package instant vanilla pudding
2 cups milk***

***1-3.25 % M.F. Cow’s milk is fortified with calcium and vitamin D so you can simply use that.

For an additional boost you can switch it with high protein milk, or swap out 1 cup regular milk with evaporated milk.

If you don’t eat dairy, soy milk or fortified high protein nut milk is the runner up.

In a pinch, coconut milk can also be used.💕

Marinara Green Beans (recipe below) is for supper tonight and tomorrow night!

Luckily, A’s adopted nonna gifted us some homemade sauce but otherwise I would have used jarred.

My daughter does not eat the beans. Full stop.

But, I pair this meal with cheesy garlic bread which she dips into the sauce. I layer the thick beans into the cheesy bread for an open-face sandwich.

The potatoes 🥔 have 2 jobs, the add natural starch to thicken the sauce as water release from the beans, and to provide the carb for meal #2.

Recipe
4 cups green beans fresh or frozen
4 cups tomato sauce
2 -4 peeled potatoes

Directions
Place everything in a large pot.
Bring to a boil, let cook until the potatoes are soft.

2 for 1 meal
-On night one, serve with cheesy garlic bread.
-On night number 2, chop the potatoes and serve under a bed of saucy beans topped with shredded cheese. Heat until cheese is melted.

Today’s lunch features chicken fennel soup with lotsa lemon juice, just how she likes it. This recipe was released this week!

This lunch also has a chocolate chia muffin. This recipe was released last week.

Today’s lunch also contained a lot of packaged foods (sorry environment) but I have to pick my battles and today, this is what I could put together.

The fruit gummies are the dessert offering while the raisins were the actual fruit offering. I like these sour raisins.

It’s getting harder and harder to motivate my 7 year old to get in the kitchen with me. It’s also something I find really challenging to follow through on cause it’s messy and takes more time.My goal is 1 kitchen session every 2-4 weeks. Chicken Fennel Soup. Hands down one of my favourite cold weather soups that I usually make on a Sunday when I am puttering around the house.

Ingredients
🔆1 large onion, with the ends removed but some skin left on
🔆3-4 garlic cloves
🔆1 fennel bulb plus stalks
🔆2 bay leaves

🔆4 chicken pieces (thighs or drums), skin removed
🔆3 carrots, washed and roughly chopped
🔆potatoes, washed and cut and quartered
🔆1 lemon or lime cut into wedges (optional)
🔆Salt and pepper to taste

Directions
✨Place the chicken carcass, onion, garlic and bay leaves in a pot with 2 litres of water.
✨Cut the green stalks off the fennel bulb and place in the pot, setting aside one piece.
✨Bring up to a low boil, place the lid and let cook for 45 minutes.
✨Using a slotted spoon, remove all the components in the pot. Set aside the cooked chicken and discard the rest.
✨Remove and discard the outer layer of the white fennel bulb. Roughly chop.
✨Add the rest of the ingredients into the pot. Bring up to a low boil and cook until the vegetables are done to your desired level of doneness.
✨Season with salt and pepper. Add the chicken pieces and the one fennel stalk that was set aside back to the pot. Cook for 10 minutes.
✨Serve over rice with lemon/lime wedge on the side.

🐥Serve deconstructed to infants and toddlers with the soup components on their tray and the broth in a cup.
