COCONUT CARROT GINGER COOKIES using 🥕pulp from your juicer

This flavor combo is inspired by one of my favorite soups of all time - these cookies turned out GOOD I will 1000% be making these again.

Did I mention these are HEALTHY⁉️ They contain fiber, protein, essential fats and micronutrients. These are well-balanced, nutrient dense and satiating and would be a FAR BETTER CHOICE for breakfast than typical go-to choices (white toast, cereal, bagel, etc)

The 🥕pulp keeps these soft and moist, they are spicy (ginger) and sweet (maple syrup) and chewy from the coconut, with nuts and seeds adding perfect crunch. These are gf, df, refined-sugar-free, and WASTE-FREE – such a great way to utilize pulp from your juicer!

The juice shown in this video is: carrot, celery, cucumber, pineapple, cara-cara orange, blood orange and ginger – SO GOOD - one of my favourite combos!

COCONUT CARROT GINGER COOKIES

WET BOWL
1.5 cup carrot pulp
2 large eggs
½ cup maple syrup
½ cup coconut oil
2 tbsp ground flax*
2 tbsp chia*
2 tsp vanilla
*Yes, these go in the wet bowl – stir in and allow time to hydrate

DRY BOWL
1 cup gf flour
½ cup rolled oats
½ cup coconut flour
1 cup coconut
1/3 cup sunflower seeds
1/3 cup chopped walnuts
1/3 cup pumpkin seeds
1 tsp baking soda
1 tsp salt
1 tbsp ginger

1. Mix wet and dry ingredients separately.
2. Mix wet and dry ingredients together.
3. Divide into equal sized portions (makes 14* x 1/4 cup sized cookies) and shape into cookie shapes. These will not rise – mold them into the shape you want.
4. Bake at 340 for 20-22 mins.
*If you opt to make smaller cookies remember that this will reduce the cooking time.

When baking with nuts and seeds it is BEST to err on the side of caution and bake lower and slower - essential fatty acids are easily burned and their quality can be damaged at high heats so lower is better to maintain integrity of nutrients.

Pre-pare. In advance.

🥕 Wash your veggies and put them in containers so they stay crisp 💦 and are easy and appealing to cook with and snack on.

🍎 Chop up fruit, wash berries, make fruit salad, etc. Make it appealing for easy access snacking.

🥬 Wash your greens and store them properly (depends on the greens) so they are Ready to be used.

Prep for success. Make it as easy as possible for future-you to make good decisions!

Cookies: but make them healthy 😋

If your go-to breakfast is nothing, or coffee / toast / bagel / muffin / pastry (❌fiber, ❌nutrition, blood-sugar💣) then switching it up to THESE ‘cookies’ would be a huge improvement.

These cookies are delicious (you & your kids will want to eat them) and even though they are gluten-free, the chia + flax + eggs in the recipe means they don’t crumble apart. These cookies travel well! ✈️ 🚘

Because they are made with nuts, seeds, eggs & oats, these cookies contain micro (vitamins, minerals) and macro (essential fats, protein) nutrition, plus fiber.

Eating these for breakfast would be a far better and more energy sustaining choice than a coffee, a piece of white toast or a bowl of cereal.

I recommend that you whip up a quick batch or two of these babies on Sunday night so that they are quick and easy to grab-and-go on busy weekday mornings.

THE BEST BREAKFAST COOKIE RECIPE

🍪Dry bowl
1 ½ cups rolled oats (I recommend organic)
½ cup almond flour (you can substitute oat flour or gf flour blend)
½ cup sunflower* seeds
¼ cup pumpkin* seeds
¼ cup sliced almonds*
¼ cup walnuts*
¼ cup sesame* seeds
¼ cup dried cranberries* (or raisins, dried blueberries, dried cherries, etc)
1 tsp cinnamon
½ tsp sea salt
Optional: add 1/3 cup of chocolate chips*
*Feel free to substitute your own favorite combinations of nuts/seeds. Use about 2 cups total, try: cashews, hazelnuts, pecans, coconut, cacao nibs, etc)

🍪Wet bowl
½ cup nut butter (almond/peanut butter, tahini, etc.) I like using half tahini, half peanut butter.
½ cup maple syrup
3 Tbs chia*
2 Tbs ground flax*
2 eggs (if you are vegan/egg-free you can substitute for flax-egg)
½ tsp vanilla
*Allow the flax and chia some time to hydrate before mixing wet and dry bowls together

🍪This will be sticky batter! Use a spoon or scoop to measure out equal portions of the mixture first, then use your hands to form cookies. They will not spread or rise so firmly press them into the shape you want.

Recipe makes about a dozen cookies

Bake at 340 for 13-15 minutes (depending on how thick) then transfer to wire rack to cool.
