This pink treat is from my cookbook “Vegan LCHF”. 🌸 It’s the Sweetest Raspberry Smoothie and it’s so easy to make. 💗
Ingredients:
2 dl or ⅘ cups coconut milk
1 dl or ½ cup water
40 g or 1½ oz. frozen raspberries
1 teaspoon lemon juice
1 tablespoon h**p seeds
1 tablespoon protein powder (e.g. pea protein powder)
3-4 mint leaves
⅓ teaspoon Stevia powder
Instructions:
Place all ingredients in a tall blending jug and blend until you have a creamy, delicious smoothie.👌🏼

Turmeric & Zucchini Stone Age Bread - take two! 😊 I first made this turmeric bread as a loaf, but it got too mushy. The solution was to make it as flat breads instead! Consistency: perfect! 👍🏻 Taste: delicious! 👌🏼⠀

The recipe: Mix 3½ dl water (approx. 1½ cups) with 2 tablespoons psyllium husks and leave the mixture to set for 10-15 minutes. ⠀

Preheat the oven to 160 degrees Celsius/320 degrees Fahrenheit. ⠀

In a bowl, mix 40 g melted coconut oil with 2 tablespoons of turmeric (powdered), 150 g sesame seeds, 150 g pumpkin seeds, 150 g flaxseeds, 100 g sunflower seeds, 1½-2 teaspoons fine himalayan pink salt, and 200 g shredded zucchini. ⠀

When the psyllium husk mixture has thickened, pour it into the bowl and stir the mixture once again. Cover a baking tray with parchment paper and pour the mixture onto the tray. Take another piece of paper and place it on top of the mixture. Use a rolling pin to spread the mixture evenly across the tray. Remove the top layer of parchment paper and cut the bread mixture into rectangles. ⠀

Bake the breads for 40 minutes. Leave the breads to cool. Once cooled, place them in containers and store them in the fridge. Should last about two weeks in the fridge.

🧡Turmeric & Zucchini Stone Age Bread🧡

I veganized a low carb bread recipe I found, and it turned out quite good. It will need some adjusting before the recipe is ready, because the consistency is not as firm as I would like it (so I’m toasting it 😄). But ahh the taste! 👌🏼🥰

It consists of a lot of different seeds mixed with shredded zucchini, turmeric, coconut oil, salt, and psyllium husks as the egg replacer.

Back to the kitchen to get this right. ➡️😄

Quick & Easy Tofu Scramble ❤️

▪️Chop 2 large onions, 4 cloves of garlic, 1 bell pepper, and 10 small tomatoes.

▪️Sauté all the veggies in olive oil.

▪️Add 400 grams of crumbled tofu.

▪️Continue sautéing for about 10 min.

▪️Season with herb salt, freshly ground pepper, smoked paprika, oregano, onion and garlic powder.

▪️Enjoy! 👌🏼😊

Hi! 👋🏻 Just thought I’d introduce myself to new followers since it’s been quite a while since I did that, and this account is growing so fast! 😊

My name is Henriette, I’m Danish, 41 years old, and I’ve been vegan for more than 13 years. I have experimented with vegan LCHF for over 3 years and found that I’m a happy liberal LCHF kind of gal.🤘🏻

I’m vegan for the animals all the way, and I’m primarily eating vegan LCHF for that calm, satisfied feeling in my body. 🍓🍋🥥🥑🍅🥬🍆

Other than that, I only like mushrooms blended in nut roasts and similar - as a flavour booster. Maybe it’s because of their texture which tends to get a bit squishy ... 🐌🐌🐌👀
