❇️ One of my fondest childhood Memories is walking through my Grandfather's Tomato 🍅 Garden in Spain 🇪🇸 and him pulling out a tiny salt shaker from his pocket, for us to try his Tomatoes along the way... 🙏🏼 Mi abuelo 💓
These can be oil-free if desired✨
🍃 These Exquisite Beauties are Simply Drizzled with a Sicilian Extra Virgin Olive Oil 🫒 Thinly Sliced Fresh Garlic, and Coarse Sea Salt ✨
To Roast, Sprinkle your favorite Fresh Herbs Thyme, Basil or Rosemary 🌱 All three if desired.
Roast at 375°~400° for about 20 minutes until they Burst & Split 🍅 These Baby Tomatoes will become Delightfully Rich and Sweet ✨
These make an Amazing Side Dish or addition to any Pasta Recipe or Quinoa Bowl 🍃
You can also make a Quick pureed Raw Tomato Soup like a Gazpacho 🇪🇸 or Tomato Sauce 🍅 by throwing them in a Blender, with Veggie broth, Seasonings and Herbs of your choice, some Fresh Garlic 🧄 and a pinch of Chili 🌶️ Pepper.
🍃Tomatoes offer Antioxidant Rich protection and Vitamins C, B-complex, A, E, K, and Lycopene.

🌿Roasted Rosemary Potatoes with Grilled Sausage and Tri~Colored Peppers, Sweet Yellow Corn 🌽, Drizzled with my Creamy Pink Peppercorn Ranch Sauce and Fresh Herbs.
A Fresh Delicious Satisfying Meal that Everyone can Enjoy! Vegan and Gluten-Free 😋
Organic 🥔 Red Potatoes are Sliced and Tossed in 🫒Dried and 🌿 Fresh Rosemary, minced Garlic🧄, Himalayan Pink Salt and Freshly Ground Pepper. In a Hot Oven at 400°F (200°C) for 45 minutes, tossing twice throughout, until Golden Brown on all sides.
✨Beautiful Sweet Red, Green and Orange Bell Peppers🫑 are Sliced into strips, Seasoned and Grilled with Vegan Italian Sausages. Mixed with Fresh Yellow Corn Niblets 🌽 Ready to Serve.
Topped with my Divinely Thick & Creamy Ranch and Pink Peppercorn Sauce, and Sprinkled with Fresh Parsley Leaves. ❇️ Ready to Enjoy.

Irish Colcannon 🇮🇪 Roasted Sausage and Caramelized Onions with a Tasty Maple Mustard Sauce ☘️ This Happy-go-Lucky Meal will have you Dancing the Irish Jig 💚 on St Patrick's Day!
Creamy Colcannon is a Traditional Irish dish ☘️ made with Buttered Mashed Potatoes and I added Cauliflower 🥔 Sauteed Chopped Green Cabbage, Lacinto Kale, Green Onions and Baby Spinach Leaves are mixed in 🥬 to give you a Complete Green Veggie Mash ☘️
To Complete this Hearty Meal, I added Delicious Vegan Sausages, which I Seasoned and Roasted until Nice and Charred, along with Sweet Caramelized Onions 🧅
My Thick and Creamy Mustard Sauce ✨ brings the Dish together with a Nice Balance of Tangy Goodness 💫 made from Whole Grain Mustard, Apple Cider Vinegar, Maple Syrup, Vegan Butter, Brown Coconut Sugar, Salt, touch of Tomato Paste, and a bit of Horseradish.

Mmm... Roasted and Stuffed Acorn Squash 🧡 California's Finest ❇️
Last of the Season... Happy Veganuary 💋
This Fresh Gorgeous Meal makes an impressive Presentation and Hearty Gluten~Free Meal, Full of Mouthwatering Tender Organic Acorn Squash 😋
This Winter Squash when Roasted and Caramelized, has a Sweet Nutty Flavor 🧡 which is complimented by a Savory Luscious Filling that brings Texture and a bit of Heat 🌶️
My Beautiful Acorn Squash is split in half, Seasoned and Roasted at 400° until Tender, 💫 which takes anywhere from 40 to 60 minutes depending on its Size. These Beauties were quite large.
While it's Roasting, I make a Lovely Stuffing with base Aromatics of chopped Onions 🧅, Carrots 🥕, Celery and Garlic🧄, then add a bit of minced Red Chilies 🌶️ for that Sweet ~ Heat Balance ⚖️
I add in my Hearty Veggie Broth, Tomato 🍅 Paste, Coconut Aminos for Sweetness, My Mushroom 🍄 Meat Mixture, then Freshly Minced Herbs 🌱
Cooked until the Flavors are well married, and becomes Thickened. Tossed with Raw Green Pumpkin Seeds and Golden Raisins. 🌿 Generously Stuffed and Baked for an additional 15 to 20 minutes, until a Crust forms and is lightly Browned. 🧡
Let Cool for 5 minutes, Top with Fresh Herbs and this Winter Feast is ready to Enjoy 💫
