Inspired by MINIMALIST BAKER], these peanut 🥜 and lemongrass bites were incredible 🤤 🎉 😊. Highly recommend.

Tempeh is such a great protein option and takes on the flavor of what you marinate/cook it with. It is made from fermented soybeans and is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form. A fungus, Rhizopus oligosporus or Rhizopus oryzae, is used in the fermentation process and is also known as tempeh starter.

Tempeh can be a bit bitter but if you boil it first it takes away the bitterness.

Four ounces of tempeh has about 22 grams of protein and 12 grams of fiber!!!! What???! Yes….that is almost half the daily requirement for both fiber and protein for a woman.

The recipe is delicious. To find it on the MINIMALIST BAKER] site, look for “peanut & lemongrass tempeh satay”.

I modified to my tastes and it was yummy 😋 .

Favorite place to do yoga? 🧘‍♀️

I’m feeling so right now. Was feeling a bit amped up so headed to outdoor yoga in such an incredible setting on a beautiful evening.

Amazing what a difference an investment in yourself can make to your overall well being! To top it off had a chance to meditate to singing bowls. I am headed home feeling calm and peaceful.

What’s your favorite 😍 recipe these days?

I have been in the road for past five weeks and am really excited to be home and cooking again. Got home and had almost no fresh food in the house 🏠. So i pulled together what i could - was absolutely delicious.

Rice
Chopped broccoli (i had a bag of frozen so used that)
Chopped dates
Sliced scallions and chopped cilantro (my niece had this in fridge)
Slivered almonds
Lemon juice (always keep a bottle in fridge)
Salt and pepper
Olive oil

Took no time to prepare and was really good.

Of course i love any dish with cilantro but the combo of sweet and savory components accented with the cilantro 🌿 was music 🎶 to my mouth 👄

Btw…did you know that some people have a gene 🧬 that makes cilantro taste like soap (including chef Julia Child)!?!?. Of course some of this dislike may come down to simple preference, but for those cilantro-haters for whom the plant tastes like soap, the issue is genetic. These people have a variation in a group of olfactory-receptor genes that allows them to strongly perceive the soapy-flavored aldehydes in cilantro leaves. This genetic quirk is usually only found in a small percent of the population, though it varies geographically.

For those of you who don’t like cilantro, you can substitute parsley 🌿.

Lebanese food in Spain!! So here’s the deal…it’s definitely not as easy to find while food plant based meals in Spain. As you may know, much food in Spain, particularly in the south is very fish forward and, of course, pork products are very popular.

For dinner tonight we went to a wonderful Lebanese restaurant as there were some good items on the menu for us, although more oil than we would normally eat. On the upside, lots of beans in the dishes. Beans serve up tons of fiber and protein (approx 8 grams of each per 1/2 cup) so we were psyched to have four dishes with beans as the foundation.

We also walked 10 miles today which was 💥 amazing. Did a nice hike during the day and a beautiful stroll along the boardwalk after dinner.

Hard to believe i could barely walk 🏃‍♀️ last time I was in Spain 🇪🇸 three years ago!

Today was our first day in Spain this trip and we spent it in a charming old town in Andalusia region.

Such a nice way to spend my birthday.

I feel so grateful to be here and be able to walk and enjoy myself. Last time I was in Spain was about three years ago.

For those of you who may not know my story and why i started this Insta page …here goes: I was traveling with my daughter in Spain and didn’t feel great. I had been feeling off for a while but nothing extreme until this acute incident. I ended up in a hospital in Bilbao Spain unable to walk. We got me a cane and they did a bunch of diagnostic tests to clear me to travel back to the States. After 45 doctor visits across 15 doctors, 7 MRIs, lots of blood tests, endoscopy, colonoscopy, capsule endoscopy etc etc, I was diagnosed with Crohn’s disease and other inflammatory related health issues. I had severe body aches, brain fog, could barely walk or hold a pencil, anxiety, low libido, brain fog, scurvy etc etc.

Here’s the punchline … my lifestyle was making me sick. I was a junk food ju**ie eating 3-5 candy bars, couple bags of chips a day and maybe a piece of fruit or salad. I was a total stress addict and didn’t manage it as well as i should have and overall just didn’t take great care of myself.

When i got sick I tried two types of medicine and both made me feel badly. After a ton of research I decided to try a whole food plant based lifestyle to try and heal myself. Guess what…Food really is medicine. Today all my inflammatory markers are normal and i don’t take any medication!! I have let nature nurture me …and it works!!

I am grateful i got sick as it was a huge wake up call for me. I was only 50 and felt like i was 75. I now feel like i will have a much better and healthier life going forward because of the changes that i made.

It’s so great to be back in Spain and really get to enjoy it this trip.

Are vegan restaurants mainstream where you live? Are you finding more and more vegan/plant-based options?

We were so pleasantly surprised by the number of options we had while in

On our last night we went to this cute little vegan restaurant (thanks .gwen for the recommendation).

The scene was great. Hip, great energy, beautiful food, amazing cheeses (base of fermented cashews) and fun decor.

The food was tasty but a bit heavy for me. What i loved was their commitment to good quality food, sustainability and veganism. My husband and i both noticed that literally ever person in the restaurant looked radiant and healthy (at least from the outside). Could it be the plant-based food…or just a coincidence???

One point worth mentioning is that many of the vegan restaurants we looked at online has super processed foods. So although vegan, they were not whole food plant based. We skipped those places.

Anyway, this was a mushroom bourguignon over mashed potato/celeriac root sprinkled with some chopped hazelnuts.

Now off to the south of Spain to a town called . Let me know if any good restaurant recommendations.

Food that is beautiful to look at and kind to your body. We ate and the vibe and food were great.

Staying plant based while traveling is not hard these days. There are so many plant based options these days. Plant based food trend is crazed - it’s totally on the rise. We used to just go to any restaurant and ask the waiter if they can make us something vegan but these days there are so many great vegan restaurant options also.

We just use look at a few sources to find restaurant options - like google, , or and type in vegan. We then do a quick online check of the menu to make sure it’s got some whole food plant based options (instead of ultra processed vegan food) and BAM💥 💥 💥 we are good to go.

Then on way back to our hotel we may stop at a grocery store and pick up some fruit (tonight we got dates and blueberries) or other snacks to have in the room.

One of best parts about eating this way is that you rarely have that full/uncomfortable feeling after eating. Hit the heart ❤️ button if you agree!!

Eating 🍽 and walking 🚶‍♀️ our way through Amsterdam. This salad was beyond delicious. For those that think vegan food isn’t tasty … gotta order the right things at the right places.

Feeling super happy to be in Europe. Unfortunately I got Covid 12 days ago so wasn’t sure i would make the trip…but feeling much better.

Do you know eating plants 🌱has so many benefits??

The science is becoming more and more clear that eating more plants and less animal products and processed foods is just better for you. Probably NOT a huge shocker!!

People think eating plants must be restrictive….ummmm…NOT! It’s liberating. It is a lifestyle of abundance. You may need to learn some new cooking techniques but your palate and body will thank you.

We had some friends over last night and, as always, i served a plant based dinner. The menu was:

✅ Spring rolls with Thai peanut dipping sauce 🥜
✅ Thai inspired kale salad with cashews 🥗
✅ Miso kale/mushroom soup (see post from xx) 🍜
✅ Tofu/broccoli “fried” rice 🍚
✅ Roasted Japanese sweet potatoes 🍠

Dessert
✅ Brownies with chocolate “ice cream” 🍨
✅ Fruit plate 🍓 🍍

I mixed it up and did a new peanut sauce which was amazing. Here’s the recipe:

Place all items in a blender and mix until smooth:
- 2 T red thai curry
- 1/2 cup lite coconut milk
- 1/2 cup + 1 T peanut butter
- 5 T date paste (or other sweetener)
- 3 T rice vinegar
- 2 -3 tsp tamari
- 1 clove garlic, more to taste
- 1/2 tsp sriracha
- 1 tsp lime juice
- 1/2 tsp fresh ginger, more to taste

Amazing food and company for a great week of vacation.

Had this amazing simple but delicious vegan meal at lunch today. Baby kale, quinoa, tomatoes, avocado with some magical dressing and some edamame with salt and lemon juice.

Thanks for a great week. And now we are off to San Jacinto Peak.

Feeling grateful today 🙏

Sometimes it’s really important to deliberately think about what we are grateful for.

It’s been a while since I have written down all that i am grateful for. I wrote it down this morning and it really lifts your spirits. I won’t bore you with my list but give it a try and see how you feel.

On a simplistic level, i was super grateful for this amazing oatmeal breakfast (this was not on my list ..just for the record …but i did really enjoy it). It was the best oatmeal I remember having. The most exciting part is that it was served with date sugar - my favorite sweetener! We are staying at a hotel in california in an area where dates are grown. I am so excited that my husband has agreed to go visit two date farms with me 🥳 🙌

I am grateful for dates 😂 and that my husband will go visit the farms with me 🎉

Also, if you have never tried date sugar, highly recommend. It’s just dried pulverized whole dates. So so good. You can buy online if you don’t see at your local stores.
