🌿 KAPHA-Balancing Summer Recipe

🍜 Zesty Noodle-Free Pad Thai with Kelp, Zucchini & Daikon Radish
A light, vibrant dish to uplift energy, improve circulation, and reduce heaviness.

🌿 Key Qualities: Light, spicy, pungent, bitter, warming

🥣 Ingredients:
• 1 small zucchini, spiralized
• 1/2 daikon radish, julienned
• 1/2 cup soaked kelp or wakame
• 1/4 cup grated carrot
• Handful of arugula or watercress
• Juice of 1/2 lemon
• 1 tbsp tamari
• 1 tbsp rice vinegar
• 1 tsp grated ginger + chili flakes (optional)
• Toasted pumpkin seeds or crushed peanuts to top

🔥 How to Prepare:
1. Mix lemon juice, tamari, rice vinegar, ginger, and chili in a bowl.
2. Toss all veggies and kelp in the dressing.
3. Top with seeds and serve fresh.

🥗 Cooling Cucumber, Watermelon & Basil Salad with Black Sesame & Lime
A hydrating, anti-inflammatory dish that clears heat and soothes liver fire.

🌿 Key Qualities: Cooling, hydrating, light, mildly sweet and sour

🥣 Ingredients:
• 1 cup diced watermelon
• 1 small cucumber, thinly sliced
• 1/2 cup mung bean sprouts or lightly steamed asparagus
• Fresh basil and mint leaves
• 1 tsp black sesame seeds
• Juice of 1/2 lime
• A dash of umeboshi vinegar or apple cider vinegar
• Optional: drizzle of flaxseed or h**p oil

🔥 How to Prepare:
1. Combine cucumber, watermelon, sprouts, and herbs in a bowl.
2. Toss gently with lime juice, vinegar, and oil.
3. Sprinkle with black sesame seeds before serving.

🌬 VATA-Balancing Summer Recipe

🍜 Creamy Miso-Tahini Kitchari Bowl with Lotus Root & Sweet Potato
A grounding, warm-but-light dish that nourishes the adrenals and supports digestion.

🌿 Key Qualities: Warm, moist, grounding, sweet-savory

🥣 Ingredients:
• 1/2 cup red lentils (soaked)
• 1/4 cup short-grain brown rice or millet
• 1/2 small sweet potato, diced
• 1/2 lotus root, peeled and sliced
• 1 tsp fresh grated ginger
• 1 tsp white miso paste
• 1 tbsp tahini
• A dash of tamari
• Pinch of cumin + fennel seeds
• Warm ghee or sesame oil
• Fresh coriander + toasted sesame seeds to garnish

🔥 How to Prepare:
1. Rinse lentils and rice. Sauté cumin + fennel in sesame oil, add ginger.
2. Add lentils, rice, sweet potato & lotus root. Cover with water and simmer 25 mins.
3. In a small bowl, whisk miso + tahini + tamari with a bit of warm broth. Stir into kitchari.
4. Serve with fresh herbs and a spoon of ghee.
