🌿 KAPHA-Balancing Summer Recipe

🍜 Zesty Noodle-Free Pad Thai with Kelp, Zucchini & Daikon Radish
A light, vibrant dish to uplift energy, improve circulation, and reduce heaviness.
🌿 Key Qualities: Light, spicy, pungent, bitter, warming
🥣 Ingredients:
• 1 small zucchini, spiralized
• 1/2 daikon radish, julienned
• 1/2 cup soaked kelp or wakame
• 1/4 cup grated carrot
• Handful of arugula or watercress
• Juice of 1/2 lemon
• 1 tbsp tamari
• 1 tbsp rice vinegar
• 1 tsp grated ginger + chili flakes (optional)
• Toasted pumpkin seeds or crushed peanuts to top
🔥 How to Prepare:
1. Mix lemon juice, tamari, rice vinegar, ginger, and chili in a bowl.
2. Toss all veggies and kelp in the dressing.
3. Top with seeds and serve fresh.
