Our Family's Favorite Mooncake: Yunnan-style Honey Ham

The combination of natural sweetener and umami. In the Yunnan region, they also produce ham similar to the Spanish Jamón, so we have the perfect excuse to visit my parents and get extra ham. The cake itself looks like a moon, and we believe in the mystery power of the ancient recipe -- this mooncake can stay good for weeks even months at room temperature.

Sometimes we can't resist this mooncake and even bake it off-season. It makes us guilty to bake though, because we think the dish itself belongs to the Mid-Autumn season. But come on, it's just so good!

Canton-style mooncake is designed for long shelf life as fridge is a modern invention, it can be stored for up to months.

But, mooncake baking takes time as well. We prepare everything from scratch: the special caramel needs about 14 days before getting in use. It's not supposed to eat Canton-style mooncakes immediately after baking, so it takes another 2 days for the getting a balanced moisture,

🥮 Exploring Mooncakes 🥮

Mooncakes, a Mid-Autumn Festival delight in China, come in various forms. From sweet to savory, with different doughs like puff pastry, caramelized soft dough, and crumble dough. This year, we're introducing Yunnan-style mooncakes with Spanish ham, inspired by Yunnan's similar ham. Also, the Canton-style mooncake, featuring caramelized soft dough. Despite the variety, they all share a round or fortunate shape, symbolizing family unity and good wishes for the seasons ahead.
