Nhắc đến note floral trong ngành hương liệu thì không thể không nhắc tới hoa hồng. Được coi là nữ hoàng của các loại hoa, hoa hồng và tinh dầu hoa hồng đã được sử dụng và ưa chuộng qua nhiều thế kỷ. Hoa hồng có nhiều loại khác nhau nhưng trong hương liệu, loại hoa cho hàm lượng tinh dầu cao nhất và được dùng nhiều nhất trong ngành hương liệu là hoa hồng damascena (một giống hoa hồng được trồng nhiều ở Trung Đông, Bulgary, Thổ Nhĩ Kỳ)
