This was ๐ฌ๐จ ๐ญ๐š๐ฌ๐ญ๐ฒ that I forgot to take a photo until I was halfway through!

It took ๐ฅ๐ž๐ฌ๐ฌ ๐ญ๐ก๐š๐ง ๐Ÿ“ ๐ฆ๐ข๐ง๐ฎ๐ญ๐ž๐ฌ to make and has a whopping ๐Ÿ‘๐Ÿ“๐  ๐จ๐Ÿ ๐ฉ๐ซ๐จ๐ญ๐ž๐ข๐ง.

Protein: 35g Fibre: 4.5g Fat: 27g Calories: 456kcal

Recipe:
2 Dr Kargs Protein Thins crispbread
40g cream cheese
100g sliced cooked chicken
100g sliced cucumber

Method:
1. Spread the cream cheese on the crispbread
2. Layer on the chicken and then cucumber slices
3. Eat before anyone else tries to!

I served mine with a fresh green juice this morning, but why not try adding some cherry tomatoes or a bit of rocket for some extra fibre and vitamins?

Thatโ€™s not a lack of resilience โ€” itโ€™s the mental load youโ€™re carrying.

All the small things that live in your head โ€” the team updates to prepare for, the healthy snacks to buy, the workouts to fit in, the birthday gifts, the project deadlines, the appointments, the school WhatsApp group messages, the friend you still havenโ€™t replied to
โ€” they all add up.

Itโ€™s rarely possible to empty your to-do list.
Sometimes, the first step to feeling lighter is simply noticing whatโ€™s there, giving yourself credit for everything youโ€™re holding โ€” then asking what truly needs your energy today, and what can wait.

Youโ€™re doing a great job and more than you think โ€” and that deserves to be recognised.

โœจ Hands down, one of the most life-changing habits Iโ€™ve built in the last year? Gratitude journaling.

Our brains are wired to focus 4x more on the negatives than the positives, which can make life feel draining some days.

By taking just a few minutes each day to write down 2โ€“3 things youโ€™re grateful for or note what went well today, you can retrain your brain to notice the good.

As a 'summer person' I always feel a bit sad when the days get darker and cooler. But I do love switching to warming, healthy meals for lunch.

Today, Iโ€™m embracing the colder days and fuelling my body and brain with my chicken minestrone soupโ€”a balanced, nutrient-packed meal with lean protein, fibre-rich beans and vegetables, and vitamin-rich kale.

Itโ€™s perfect for using up Sunday roast leftovers and even better to batch cook and freeze, ready to enjoy whenever you need it.

Easy Slow Cooker Minestrone Soup

Ingredients:
โ€ข 2 tbsp olive oil
โ€ข 1 onion, chopped (fresh or frozen)
โ€ข 2 celery sticks, finely chopped
โ€ข 2 small carrots, finely chopped
โ€ข 1 red pepper, chopped
โ€ข 3 garlic cloves, minced
โ€ข 1โ€“2 tsp dried Italian herbs
โ€ข ยฝ tsp smoked paprika (optional)
โ€ข 1 can (400 g) chopped tomatoes
โ€ข 50 g tomato purรฉe
โ€ข 1 litre chicken or vegetable stock
โ€ข 1 can (400 g) cannellini beans, drained & rinsed
โ€ข 300โ€“400 g cooked leftover chicken, shredded
โ€ข 100 g kale, chopped
โ€ข 15 g fresh parsley, chopped
โ€ข 100 g small pasta (wholewheat for extra fibre)
โ€ข Salt, pepper, optional chilli flakes

Instructions:
1. Add onion, garlic, red pepper, carrots, celery, herbs, smoked paprika, chopped tomatoes, tomato purรฉe, stock, and beans to the slow cooker. Stir lightly and season with salt & pepper.

2. Cover and cook on low for 6โ€“8 hrs or high for 3โ€“4 hrs.

3. 30 minutes before serving, add chicken, kale, and pasta. Once pasta is cooked and kale is wilted, stir in parsley, adjust seasoning, and serve hot.
