๐ The purple cauliflower contains additional anthocyanins, the pigment which makes it such a vibrant colour and is shared with other purple veg like blueberries, red onions and aubergines. This gives it an extra antioxidant hit to support our hearts, brains and digestive health.
๐ There are so many ways to enjoy cauliflower...roasted whole, pulsed into rice or pureed into an alternative to mashed potato...and you can eat all of it, leaves and all.
