High-Protein Stuffed Bell Peppers

Ingredients
• 2 bell peppers, halved
• 1 cup ground chicken or turkey
• ½ cup cooked quinoa
• ¼ cup Greek yogurt
• Spices to taste
Instructions
1. Cook filling: Sauté chicken with spices, then mix in quinoa and yogurt.
2. Stuff peppers: Fill halved peppers with mixture.
3. Bake: 375°F (190°C) for 20–25 minutes.
