As a type 1 diabetic, I've learned firsthand about the influence of diet on my health. Ranging from the initial struggles of managing blood sugar, to the stresses of planning meals or learning how to cope with the mental challenges of living with diabetes, I believe that my strengths are about having experienced the ups and downs of life with diabetes. Ever wondered about Statins?!

Of all the warped science being flouted by drugs companies, statins are up there as one of the worst, based on the absolute benefit versus negative metabolic effects experienced by most users.

These include;

⬆️ 50% increased risk of T2 Diabetes
⬆️ Risk of brain disorders in later life ( including Alzheimer’s
⬆️ Muscle aches which reduce ability to be physically active

Look who was featured in a magazine! It’s only our group of ninja T1Diabetes volunteers!

Living with T1 diabetes is a constant journey of resilience, hope and perseverance.

Im so fortunate to volunteer with an incredible group of individuals, all working to improve the quality of life for those with T1D.

We were honoured to to be featured in this month’s Top Sante magazine, where one participant at our in residence course shared her life changing experience - finally feeling empowered to optimise how she uses insulin to improve everything from sleep, energy, mood, and her ability to better manage her blood sugars.

Thinking about health across more than just medicine is so important and proves how everything works in symbiosis.

Sometimes a good poem just says so much about how we are feeling. The perfectly chosen words, the rhythm of the words spoken out loud… or just the familiarity of knowing what comes next.

This last month I’ve been so busy I’ve not had much time to just park off on a bench and watch the waves, so seeing this photo on my phone was a lovely reminder.

What poem do you find yourself quoting every so often? (And perhaps even surprise yourself that you remember the words..?

Such a hopeful sunrise this morning, climbing the steps to the clifftop!

I’ve had a crazy week of long days and late nights, burning the candle at both ends. The one thing that keeps me sane is going for a walk every morning before work.

It’s a time for me just to gather my thoughts and process what I might be facing that day.

This morning, seeing the sunrise after 2 days of drizzle was just so beautiful and hopeful!

Mustard, Herb and Walnut crusted pork, with whole roast garlic - healthy comfort food after a day of research writing!

The secret to making a crusted Pork chop that’s still moist but fully cooked, is to oven roast on one side until the fat only just starts to render….

Remove th chops from the oven while you make the crust mix, then, before returning to the oven flip them over and lather on the mix.
Return to the oven for around 7mins.. until the crust is just starting to crisp.

For the herby/mustard crust I used:

Handful Dill (chopped fine)
Handful Parsley (chopped fine)
Handful Mint (chopped finely)
2 Tbsp Wholegrain mustard
2 Tbsp olive oil
Maldon Salt (generous pinch)
Black Peoper (generous few grinds)
Dried rose petals
(Mix it all together and spoon onto the unbrowned side of the chop)

SERVED WITH:
🧄Whole roasted garlic
🍎Grilled Apple Slices

NUTRITIONAL VALUE
For the pork: Protein, B-Vitamins, Choline, Iron.
For the Garlic: antibacterial / antifungal (from the Vita C, Calcium and Cooper)

Greek Stuffed Eggplant 🍆 (MELITZANES PAPOUTSAKIA)

(Made with feta and cream cheese instead of béchamel to cater for )

After a cold, drizzly day, and a long beach walk, a Mediterranean supper was a perfect reminder that sunshine will come again!

To add to the Greek theme, I served it with stuffed mushrooms. (Northern Greece has some of the best mushroom varieties in the world - including ,
and truffles)! And maybe a glass of wine..! 🤣

NOTES:
- I always pre grill the aubergine til completely done before stuffing and topping with cheese.
(Nothing worse than al dente aubergine!)

- For the stuffed mushrooms I used peppers, chorizo, pink onions, garlic and a few chipotle flakes + green pesto and Parmesan
(The pink onions are a tiny bit sweeter than the red)

Nutrition: great source of protein, potassium, calcium, vitamin D and antioxidants,

All in all… I would make this again!

What a lucky bird getting to watch the sunrise this morning!

It’s so lovely going for my morning walk now that the mornings are getting lighter. Every day on my walk I see birds sitting on the clifftop fence, watching the world below, and I do wonder what it must be like to not have a care in the world, and to enjoy the moment for what it is… just a beautiful sunrise!

I need to be more Bird!! 😀

Meatballs with Mole sauce: perfect !

What a week it’s been and finally it’s time to switch off my computer and put on my playlist! 🎵

This Mole sauce is really easy to make and you can leave it to simmer while you prep the rest of the meal..

For the Mole I used:
1 Head of Garlic
1 med onion (finely chopped)
1Tbsp Butter
1Tbsp Smoked Paprika
(I highly recommend
- my favourite paprika from Spain)
A handful of fresh coriander, finely chopped, (including stalks)
Salt and Black Pepper
Cheese to serve

Gently sauté the onion, garlic and paprika until the onion is starting to soften.

Add the tinned tomatoes and allow to simmer to reduce the liquid.
Just before serving, add the coriander.

NOTES:
If you prefer a smoother sauce feel free to blend. If you like it rustic, simply add the browned meatballs and allow to simmer for approx 10mins.

For a bit more heat, I used Chipotle flakes.

I also added 1 tsp of tomato paste for a bit more tomato zing!
