Today's lunch....bit of a random combination of what I had in the fridge plus my current favourite fermented vegan cheese (you have to try them, they are divine!) Plus a delish seeded sourdough from Better Foods. Topped off with a heavy sprinkle of broccoli sprouts which are packed choc full of antioxidants. Yum yum. What are you having for lunch today?

Soups are a great way to increase your fibre and diversity count. 🥳

Here is a super-quick, tasty and nutrient rich vegan, gf, and df recipe - that will only take 10 minutes to make - recipe as follows:

2 tbsp olive oil, 2 leeks, 200g peas, 50g cashew nuts, 50g watercress, 1 x tin cannelini beans, 750ml chicken stock, 1 tbsp dijon mustard. Saute the leeks for 5 minutes, add the remaining ingredients, simmer for 5 minutes, blitz, season and enjoy! 😋

Hi everyone and welcome to my new page!

As most of you will know, I have setup my nutrition clinic recently under the name of Viva Nutrition.

Running clinics and seeing a mix of people, there is one common theme that pops up every time - gut health!

There is so much research being undertaken on the gut microbiome and it's role in health and disease, that I wanted to setup a page that focused purely on gut health and how we can all improve it - hence The Fibre Foodie being born!

Here you will find lots of recipes, tips and the latest research findings into all things gut health. And there's a hint in the title of my page to how to improve your gut health - fibre!
