Life recently... ๐ฅ๐ฅฐ
Being outside as much as possible is mostly where I'm at!! We're loving family camping trips, hikes and the daily multiple walks for nap time ๐
I'm also back to work delivering a variety of different corporate workshops which I'm loving and taking on a few 1:1 clients. It's been incredible to fit work around maternity leave and I'm super grateful for where Mind Nourishing is right now. It fits Mum life incredibly ๐
Life is hectic yet slow. Overwhelming yet simple. Full of new experiences and also mundane. It's hard yet I love it so much and feeling really grateful for what I have.
Soon there will be more work, more posts and a new energy in business life but for the time being I'm loving working when I can.. usually when Bebe naps or in a coffee shop in between lovely food ๐ฅฐ๐ฅฐ
(Currently nap trapped in the car hence the post ๐คฃ๐คฃ)

My biggest achievement in 2024 is learning to eat one handed ๐คฃ
Oh and take my business Mind Nourishing into it's 6th year of operating annnnd of course growing and giving birth to an absolute boss ๐๐๐
Next year will very much be about discovering a new world with a baby whilst also continuing to learn, teach and inspire people to improve their gut health and mood through their food.
I can't wait to see what 2025 holds ๐๐๐โจ๐ฅ
Pic 1- sushi lunch on our first holiday family holiday to Stratford upon Avon
2- Mind Nourishing's Christmas dinner- Pho with Summer rolls ๐คค
3- Dosa time! Our first lunch out where Ezra also wanted lunch ๐
4- Absolute boss- wearing his little analyst baby grow from his Daddies work colleagues ๐ the sunglasses were because he's just next level cool ๐
12/11/2024
Our little ray of sunshine has arrived! Ezra Aiden Bryan arrived into the world at 5.29am on the 08/11/24 weighing 7lbs 10oz.
I can't stop looking at him, smelling him, cuddling him and of course worrying about his bowel movements ๐ ๐ฉ
Who would have thought something so small could bring so much love ๐๐โค๏ธ

39 weeks of growing our little one ๐
These are the nutrition and mindset lessons I have learnt along the way...
๐ฅ Listen to your body and hunger cues and respect them. My biggest craving has been fruit and I've loved adding in grapefruit, berries, kiwis, pineapples and lots of fruity squash to my day. I've also craved cheese, cake and crackers and iv also fully respected in that moment that's what I need and I've bloody well enjoyed it ๐คฉ
๐ฅ Electrolytes are now a must for me as nothing was quite quenching my thirst. Sometimes a sign of thirst is that you're not getting enough of the minerals you need, especially as our tap water (and some filtered water) are stripped of them. So I added them through electrolyte drops and more recently, stevia sweetened fruity water (of course ๐๐)
๐ฅ My body has changed so much to house baby B and in the last few weeks with extra water retention that on occasions I don't really recognise my new body. What is amazing though is it's not from a negative place (like previous me probably would have felt) of disgust or sadness. Just an acknowledgement that I look different in this stage of life and that's beautiful and ok ๐ฅฐ I'm so so glad I did the mindset work around my self image before taking on Mummyhood
๐ฅ Supplements can sometimes be sooo essential during times of big changes in our lifestyle. Iv managed to continue to eat pretty balanced food wise (maybe with slightly more sugar!) but I have added in (or continued having) a preggo multivitamin, omega 3, magnesium, extra iron (when my blood levels became low) and prebiotics
๐ฅ Female bodies are just incredible. I am in awe with what my body has created and how thankfully I can still do things I love like lifting weights, doing yoga and going for walks. I am however so bloody excited for my hips to feel less loosy Goosy so I can run again ๐๐
So with 6 days until my due date, il just be over here, eating all the foods, doing all my stretches and being totally and utterly grateful that Mind Nourishing has just turned 6 years old and I bloody love this business and how it's providing for me over my maternity leave ๐ฅฐ๐ฅฐ๐ฅ

โจโจFREE RECIPE E-BOOKโจโจ
Did you know, my favourite meal of the day award goes to.... ๐ฅ๐ฅ๐ฅ๐ฅ
BREAKFAST!!
I absolutely blummin love it but if I'm honest, the majority of my breakfasts are eggs.
๐ณFried eggs with avo, tomatoes and sourdough
๐ณ Boiled eggs with greens, hummus and crackers
๐ณ Scrambled eggs with mushrooms, spinach and toast
I rarely get bored with eggs but when a recent client didn't really like eggs too much I was forced to start thinking of some new ideas ๐ค
So with the help of my lovely work experience student, we put together a high protein breakfast recipe book to mix things up, create some tasty dishes (that help you feel super satisfied) and give some new ideas to start your day. It seems a shame to have these ideas just sat on my laptop over my upcoming maternity leave so I want to share them with you!!
Some of the recipes you'll get are:
๐ Shakshuka as pictured (ok that one has eggs ๐คฃ)
๐ Avocado bean toast
๐ Protein pancakes (also pictured)
๐ Green Goddess Bean Bagels
๐ Cottage cheese bread with pea hummus
And many more...
If you want FREE access to this download, just comment 'Me please!' and I'll DM you the link โค๏ธ (or head to my bio)
Think of it as a pre- maternity leave prezzie from me to you โค๏ธ Just 2 days at work to go ๐๐คฐ๐ผ

Lacking in iron?? ๐๐ผโโ๏ธ๐๐ผโโ๏ธ
A few days ago my midwife informed me that following my routine blood test, my iron was slightly low. I've always been told my iron is pretty high so it goes to show how much ๐ถ๐ is needing it at the mo (and sucking me dry ๐๐).
Also might explain why walking some hills really took the puff out of me recently ๐คฃ I presumed it was the extra luggage ๐
So now I get to have some extra fun optimising my diet to get in more of this incredible energy supporting mineral and I thought this could also be useful for you too if you sometimes struggle with iron deficiency ๐ค
My plan is:
๐ Start taking an iron bisglycinate supplement which is really easily absorbed. I'm opting for this over the prescribed ferrous sulfate iron tablet as I want to avoid any gut discomfort and clogging up ๐
๐ Add in some additional red meat during this time as it's one of the best sources of iron. I'm usually not a mega fan of too much red meat but I have been craving some spag bol recently (maybe my clever body telling me it wants iron) which is on the meal plan this week along with this beautiful beef massaman curry my husband made ๐๐คค๐คค
๐ Adding tofu to the planned stir fry (tofu is also a great source of iron) and getting in lots of green leafy veg like spinach and watercress for their 'non- haem' (i.e non meat type) iron. The absorption of this is increased with vitamin c so I will add things like tomatoes/ pepper/ squeeze of lemon to these vege foods to get the best 'bang for my buck' ๐
Super glad this got picked up whilst I'm still feeling good but maybe it's a reminder to you that if you're feeling exhausted, getting out of breath quicker than usual or generally not feeling yourself- get your bloods tested and see whether you need some extra help โค๏ธ

Back from Wilderness festival and also back to food/ mood fun on Instagram ๐๐ฅ๐ถ
REAL TALK- over the last year I pretty much stopped posting on here because realistically I no longer found it fun. It wasn't about sharing my passion anymore, it was about feeling pressure to be consistent, win over an algorithm and put numbers and likes as a measurement of my self worth ๐
So I stopped...and my business kept going and kept growing and I survived ๐คฃ๐โค๏ธ
I now mostly work in the corporate sector and have absolutely LOVED supporting a range of different organisations to boost the mental wellbeing of their workforce (and wider communities they work in) through the power of gut health, nutrition and mindset support ๐คฉ๐คฉ
So after a long weekend of being in a field with awesome food, company and good vibes (along with a big preggers belly ๐ ), I'm keen to get back to this little pocket of the internet to just share my passion, get creative and connect with some beautiful foodie souls with no pressure to 'be', 'do' or 'gain' anything that just feels iffy ๐
So thanks for allowing me a teeny space in your life and feed to just be me doing and sharing some things I love ๐๐ฅ๐ฅฐ

Reflecting on the last 2 weeks of becoming a Master Mindset Coach in Corfu and ridiculously excited to be launching my new transformational coaching package.
I have opened up 2 spaces for 2 individuals to experience my 'Breakthrough' package in July. A truely transformational 2 days that will:
- Give you clarity on what specifically you want to achieve by getting clear on your wellbeing/ career/ mindset goals
- Identify any negative emotions and limiting beliefs that are holding you back and go through a process to reframe your unconscious mind so that you can quickly and super easily start aligning your life to how you want it to be
- Find out what you're values are (held at an unconscious level) and sort out any conflicts or issues that might be causing motivation issues and preventing you from seeing the success you desperately want
These are just a few of the things we will do over the 2 days and I promise, the shift in how you feel, the shift in how you talk to yourself and the results you get after this 2 week process is just incredible.
If you want to book a free chat to see if we're a good fit for working together, book a call through the link in the comments.
*I am offering the first booking a 40% discount in return for a testimonial at the end of the coaching ๐*

What an incredible experience! I'm 10 days into my master mindset coaching (NLP) course in Corfu and I can't quite put into words how amazing it has been so far.
I have learnt a bucket load of strategies and techniques to elicit insane shifts in how people think about themselves and optimise their behaviour so that they can quickly get the results that they want (in their own wellbeing and even career) .
I have experienced positive shifts in my mindset and I have supported others to the same.
I was going to wait until I got back home but as I can't wait for you to share the life changing impact of this mindset coaching, I am opening up bookings in July for 2 people to go through a 'breakthrough weekend' with me. Over this weekend you will release the limiting beliefs that are holding you back from the dream life you're desperate for... We will align your values so that you see results in your life super quick and you will overcome any conflicts in your mind that are keeping you unmotivated and 'stuck'.
If you want to chat more about the opportunity in July, send me a message and let's discuss further. The first client to book will receive a discounted rate in return for a testimonial ๐
Oh and if your intrigued, the pic shows how I learnt how to model an expert and broke this board with my hand ๐๐

Had an awesome day in the woods yesterday filming some content for a nutrition and foraging course I am delivering alongside Coed Lleol for their online 'Fantastic Food' programme.
Thanks also to Jason from A Great Alternative for some amazing filming ideas and making it such a fun day! (somehow I managed to keep dry feet after this stepping stone shot!)
Now for day 2 of filming!

At the age of 22 after travelling solo around South East Asia I visited Wales, fell in love with its beautiful surroundings and friendly people and moved there. As a Englishwoman figuring out my new surroundings I did the cultural essentials like try my first Welsh Cake, learnt lingo like โcwtchโ, โbuttโ and โbardyโ and realised that rugby means everything.
With a fresh Exercise, Nutrition and Health degree I began working in the community organising the โCardiff cycle challengeโ and a variety of other active travel events. I was then offered the most amazing opportunity to work within the Welsh Valleys for a Social Housing Association. I co-ordinated (then later managed) a programme which was all about supporting young families to become more active alongside teaching basic cooking skills and healthy eating advice.
Although I absolutely adored the job and the changes the programme made to families, I was blown away by how so many of the families that I worked with struggled with their mental wellbeing. Some of the parents were unable to leave the house and were so crippled with anxiety, depression and overwhelm that the last thing that crossed their minds was preparing food and fuelling their bodies. Processed foods were usually on the menu and along with a lack of fruit and vegetables, energy levels and feeling of wellbeing were often limited.
When the funding for this valuable programme ran out I felt the need to learn more about nutrition and in particular โhow food can affect your moodโ. From personal experience I knew that when I ate a colourful, diverse, nutrient rich diet I felt amazing. I was determined to support others to have that feeling and wanted to show people that it doesnโt need to be a complicated and expensive thing to do. So with a passionate heart I went off back to University to gain a masters degree in Nutritional Therapy.
In October 2018 after graduating I quit my full time job to dedicate myself purely on building my Nutritional Therapy business โMind Nourishingโ.
Mind Nourishing aims to inspire and educate people about how food can affect your mood alongside offering support around stress reduction, sleep and elements of positive psychology. My โaverageโ week includes working with clients 1:1 (both online and face to face) to create personalised programmes that are created to specifically support their individual health goals and symptoms. The advice is also made to fit their lifestyle and cooking skills so I also spend some time researching and creating recipes and handouts that my clients may find useful.
Alongside this you will also find me creating nutrition and mental wellbeing themed social media posts and blogs and even creating youtube videos to try and spread my โfood for happinessโ message.
To be able to continue my work in the community I have also been lucky enough to run nutrition cooking sessions and workshops to a variety of different groups. This has been great for showing how โhealthy eatingโ doesnโt need to be expensive along with educating children of a young age safe cooking skills so they can learn the skills they need for the future.
In the near future I have got a variety of exciting projects coming up like: โGood Food, Good Moodโ talks and workshops I am delivering with a positive psychologist, linking up with a strength and conditioning coach to run online programmes and gut health facebook challenges with a health coach specialising in environmental toxins. As my business grows and my reach increases I hope that some of my messages can spark even just the smallest changes in behaviour as I often find that sometimes just the smallest changes can have such a big impact on happiness.
