As we head towards the end of National Barbeque Week, here's another recipe that always goes down well 🍽️

Our BBQ Jerk Chicken recipe is just one of the delicious and nutritious recipes on our website. We've got sides and drinks that will go perfectly with this gorgeous chicken dish.

Ingredients 📜
(Serves 4-8)
1 Whole chicken or equivalent pieces (1-1.5kgs)
1 tbsp allspice berries
1 tbsp black peppercorns
1/2 tsp cinnamon
1/2 tsp ground nutmeg
1 tbsp fresh thyme, chopped
4 spring onions, chopped
2 scotch bonnet or other hot chillies, finely chopped
1tbsp coconut sugar
1/2 tsp salt
2 tbsp soy sauce
juice of a lime


Method 🍗
1. Grind the allspice and peppercorns and combine with the onions, thyme, cinnamon, nutmeg and chillies.
2. Mix and loosen with a splash of olive oil. Pour into a wide bowl and stir in the soy sauce, sugar, salt, and the lime juice.
3. Add the chicken pieces one by one, massaging the mixture into the chicken as you go (don’t forget to rub under the skin, too)
4. Marinate for as long as you can but preferably overnight.
5. Heat the oven 10 180°C. Place the chicken pieces in a warmed roasting dish and cover with foil.
6. Cook in the oven for 45 mins, then rest the meat until you’re ready to barbecue.
7. Finish cooking the chicken pieces on the barbecue, grilling for a minute or two on each side.

As a part of National BBQ Week, we've already shared a tasty burger recipe. Here's a delicious side salad that will complement your burgers perfectly 🥗

This Kale & Avocado Salad recipe was developed by our Zest4life Nutrition Professional, Sharon Strahan. You can find Sharon's details on our website, along with lots of other recipes to get your taste buds celebrating.

Ingredients 📜
(Serves 2 )
2 big handfuls of kale
½ red onion, chopped
1 ripe avocado, peeled and chopped
8 cherry tomatoes halved, or 1 medium tomato cubed

Dressing:
Olive oil
Balsamic vinegar
Himalayan sea salt
Fresh ground black pepper

Method 🥙
1. Wash kale and remove any tough woody bits.
2. Place all ingredients in a bowl.
3. Drizzle with olive oil and balsamic vinegar and massage with hands until all of the salad is lightly coated.
4. Add sea salt and pepper to taste.

It's National Barbecue Week and with some good weather forecast for the weekend in the UK, we thought we'd share some healthy BBQ recipes 🍔

First up is a delicious Vegetarian burger recipe, created by our Zest Nutritional Professional, Helen Monk.

Ingredients 📜
1 onion, finely chopped
Splash extra virgin olive oil
1 tablespoon extra virgin olive oil
Tin chickpeas, drained
1 tin black beans, drained
1 slice wholemeal, rye or gluten-free bread, toasted and blitzed to breadcrumbs
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons smoked paprika
½ teaspoon ground cumin
1 teaspoon oregano
1 pinch chilli flakes
1 egg, beaten (switch to an egg substitute to make this vegan)

Method 🥗
1. Soften the onion in the olive oil, about 5 minutes. Combine all the ingredients in a bowl.
2. Either mash the mixture with a potato masher, or bash with a rolling pin, or squash in your hands to break down some of the beans.
3. Lightly flour your hands and shape into 8 balls and place in the fridge for 30 minutes. This will make the burgers much easier to shape and hold together.
4. On a lightly floured surface, shape each ball into a burger, about 1cm thick. Don’t hold back on squishing as this will help prevent them from breaking apart when cooking.
5. Heat the tablespoon of oil in a frying pan and cook for 5-6 minutes on each side or until nicely browned and crisp-looking.

📢Notes
Red kidney beans can be substituted for the black beans, but the finished texture might be a little drier. Have fun trying out different spice and flavour combos - the options given here are family-tested and approved!

500ml sparkling water

🇬🇧 Jubilee street parties will be taking place across the UK this weekend. If you're struggling for a bit of healthy party food inspiration, here's a lovely little recipe to get you started.

Gluten Free Blinis 😋

This recipe makes 40-45 blinis - perfect for a party!
2 eggs
175g buckwheat flour
2tsp baking powder
300ml milk
Oil, for frying

Method
1) Break the eggs into a jug and whisk until frothy.
2) Stir in the flour, baking powder and milk. Beat well to make a smooth batter.
3) Put a little oil into a frying pan, roll it around to cover the surface and heat until the pan is hot.
4) Pour a teaspoon of batter into the pan and cook over medium heat. When bubbles appear on the surface of the blini and the base is golden turn the blini over and cook the other side.
5) Transfer cooked blinis to a cooling rack.
6) Repeat with the remaining batter.

Your finished blinis will be about 3-5cms wide and can be used as a the base for pretty much any topping, from smoked salmon and sour cream, or caviar (pictured), prawn and guacamole, goat’s cheese and beetroot, and so on.

Today's share is Cucumber, Mint & Lemon Fizz.

This delicious zero alcohol alternative will serve 6.
1.5ltr sparkling water
Half a cucumber, sliced
10 mint leaves
1 lemon, sliced
Put all the ingredients in a large jug, chill and serve.

Easy and refreshing.
