During times of stress, one of the first places to show the signs is in our skin.
A healthy alkaline diet, drinking lots of water avoiding sugar and alcohol will get you back on track.
After thoroughly cleansing your skin at night, apply a facial oil. (massage for a few minutes )
I use prickly pear
The prickly pear produces a fruit whose seeds are cold pressed to obtain a rare and high quality oil.
Containing:-
Super anti-oxidants which protects the skin against ageing due to damaging radicals.
Essential fatty acids help calm down inflammation, so ideal for those suffering with rosacea prone skin.

Curried Parsnip soup for lunch today.
I thought I would cook the parsnips in the oven to make them sweeter.
So easy.

Heat oven to 200’
Oil a roasting pan.
Add
1 kg Peeled and chopped parsnips.
(if you like a thicker soup peel and add 2 potatoes)
I large peeled sliced onion
2 cloves of Garlic ( they are sweeter if you don’t peel them)
1/2 teaspoon turmeric
1/2 teaspoon cumin
1 tablespoon curry powder
Stir until the veg is covered.
Cook until soft.
In a large saucepan pour 1 1/2 litres of stock. ( fresh if you have it. If not a chicken stock cube works well)
Bring to the boil
Then add the roasted parsnips + potatoes, ( if using)
Simmer for 10 mins.
Then blitz.
If you don’t like such a thick soup add more water.
Enjoy.
( I like a squeeze of lemon on top)

Turmeric

During this unique time, it will not be unusual for people to feel low due to us having more time to reflect / pontificate.
Turmeric helps lift the spirits, as it appears to influence multiple biological mechanisms and reduces oxidative stress.
It also regulates and increases the dopamine and seratonin levels in the body.

With supplies running low, last night, in true “Keep calm and carry on” fashion
We had a store cupboard supper.
A Different take on Kedgeree, so easy.

Kedgeree

150grm Basmati rice ( we only had long grain)
70grm butter
I oninon chopped
Pinch of chilli flakes.
1/4 teaspoon of ginger ( slice of fresh)
1/4 teaspoon cumin/ curcumin
1/4 teaspoon Turmeric
1/4 teaspoon garam masala
1. teaspoon curry powder
Handful of spinach 1/2 lemon
Hard boiled eggs. (We didn’t have any eggs so used asparagus)

Cook the rice until tender. Set aside
In a large saucepan, melt the butter then add the onion and cook until soft
Add all the spices. Cook for 1 minute
Add the spinach, cover the pan and cook for 2 mins. (If you have cream you can add it at this point. Bring it to the boil and simmer for 5 mins. I don’t bother as I’m dairy intolerant)
Season with black pepper and salt
Squeeze the juice of the lemon into the pan and stir.
Slowly add the cooked rice and stir until completely combined. Cook for a further minute, then serve
Placing hard boiled eggs/ asparagus on top. 😋

Turmeric is the superfood of the spice world. Together with its effective, active compound, Curcumin it has many proven health benefits.
Turmeric possesses properties that are

Anti-fungal
Anti-oxidant
Great for the IMMUNE SYSTEM because of its high antioxidant properties that are thought to reduce the amount of free radicals in the body, which in turn, will boost the function of the immune system
The active compound Curcumin, provides strong disease fighting cells, which helps improve antibody responses. By enhancing anti oxidation in the body it serves to protect the liver.

TYPE 1 DIABETES:- Turmeric may help manage high glucose levels in the blood. This spice has been seen to increase insulin sensitivity which leads to lower blood sugar levels.
Turmeric also reduces glucose creation in the liver.
It improves activity and performance of the PANCREATIC cells, called beta cells.
It’s accomplished by repairing and regenerating the beta cells
The PANCREAS is the main producer of insulin, which is used by the body to absorb sugar.

TYPE 2 DIABETES. The health of type 2 diabetes’s patients greatly depends on Lifestyle and diet changes.

Turmeric Soup

Heat oven to 200’ fan
1 Butternut squash
1 Tablespoon of coconut oil or olive oil
1 Onion peeled and finely sliced.
2 Cloves of garlic peeled and finely sliced
200 grms Carrots peeled and diced
100 grms red lentils rinsed thoroughly
1 litre of vegetable or chicken stock
I teaspoon Turmeric
1teaspoon Black pepper
1 teaspoon ginger
(If you don’t have these spices, use 1 tablespoon of curry powder containing Turmeric. )
I don’t peel or chop Butternut squash as I’m afraid of losing my fingers. So I wash and pat dry the squash then rub a little oil into it, place it on a baking tray and cook it for an hour, or when you place a knife into it, it is soft. Leave it to stand for 10 mins then cut in half, remove the seeds and scoop out the flesh from the skin.
Whilst the squash is cooking
Put the oil into a large stock pan or saucepan, sauté the onions and garlic.
Stir in the spices
Add the carrots , lentils and stock.
Bring to the boil simmer for 45 mins stirring occasionally to prevent lentils from sticking.
Add the butternut squash, simmer for another 10 mins
Then liquidise with a blender.
Will make 3 x 1 pint pots.
Will freeze or keep for 3 days in the fridge.

Immune booster Turmeric tea

It’s best to use fresh Turmeric and Ginger
If you are lucky enough to have it during this unique time, use a thumb size of each, otherwise Most of us have Turmeric on our spice shelf
To One pint-of boiled water in a sauce pan.
Add
1/2 teaspoon each of Turmeric, black pepper, ginger.
Tablespoon of coconut oil
Zest of an orange or lemon ( I used a satsuma)
Few leaves of mint.
Stir together and simmer for 10 mins, then add the juice of the orange/lemon
Stir, strain, serve in a mug, add a 1/2 teaspoon of honey ( or sugar )
If you have them add a cinnamon stick
(It will keep for three days in the fridge )

Pain relief
Depression
Memory/ Alzheimer’s
Heart disease
High cholesterol
Liver disease
Digestive problems
Reading all the facts and literature it’s hard to see if there is anything it can’t help.
Unfortunately it isn’t easily absorbed, but by adding black pepper and fat ( I use coconut oil, but you can use ghee or butter) it then moves quicker through the bloodstream to where it is most needed in the body.
This spice has been used for over 4,000 years and is sometimes known as Indian
saffron.

A quick store cupboard fix is to add a pinch of Turmeric, black pepper and ginger to a teaspoon of honey.
If you suffer with hay fever use local honey, as it helps to desensitise the local allergens.
It also quells the swelling of sinusitis
