Beetroot Hummus

โ€‹โ€‹This delicious dip is a great accompaniment to falafel and flat bread, but you can also enjoy it with carrot and celery sticks or even as a spread for your toast. Prepared with Formula 3 Personalised Protein Powder, this dip with a twist is low in sugars and high in protein.*โ€‹

โ€‹โ€‹Nutritional Informationโ€‹

Nutrients per serving:

Energy: 83 kcal

Protein: 6 g

Carbohydrate: 7 g

Fat: 4 g

Fibre: < 1 g

Sugar: 2 g

Ingredients
4 servings (24 g) Herbalife Formula 3 Personalised Protein Powder

2 small raw beetroots (175 g in total)

1 x 400 g tin of chickpeas

2 tablespoons coriander, finely chopped

2 generous teaspoons ground cumin

1 tablespoon tahini paste

1 tablespoon lemon juice

3 tablespoons extra virgin olive oil

1 teaspoon sesame seeds, to garnish

Handful of coriander leaves, to garnish

Instructions
Peel the beetroot, cut into chunks and place in a food processor.

Drain the chickpeas from the tin but reserve the liquid.

Place the chickpeas in with the beetroot and add the coriander, cumin, tahini paste, Formula 3 Personalised Protein Powder, lemon juice and olive oil.

Blend well, adding some of the chickpea tin liquid to loosen the mixture.

Tip the mixture into a bowl, garnish with sesame seeds and coriander leaves and enjoy.

Tips:

Cover the hummus if storing it in the fridge โ€“ preferably in an airtight container.

If you want a bit of heat, add a little chopped red chilli to the food processor.
