A great afternoon was had today as Eileen demonstrated her potato and leek soup recipe π₯ π§

The ladies sat down to eat along with wheaten bread and cheese, and of course a cuppa afterwards! βοΈ
Thank you Eileen for feeding us today and sharing your recipe - we all agreed the soup was delicious! π
The next healthy eating class will be held on Wednesday 18th March.
π Ingredients π
- 1 large or 2 medium onions, chopped
- 3-4 medium leeks, chopped
- 1kg potatoes, cubed
- 3 stock cubes (chicken or vegetable)
- 3 pints boiled water
ποΈ Recipe ποΈ
1. Spray saucepan and soften the onions
2. Add the leeks
3. Dissolve the stock cubes in the water and add to pan
4. Add the potatoes
5. Bring to the boil then simmer for around 30 minutes
6. Cool and blend.
