Sarah joined my group training programme in October and in these past 4 months has not only lost over 10kg (I mean look at that waistline) but has gained so much strength, stamina and all the confidence in the world. ✨
I remember when she would struggle with keeping her balance doing lunges (lunges are something she has learned to love - and her form is absolutely perfect as is her balance now), could only do high plank Burpees (whereas now she does full chest-to-floor Burpees like a pro) and would get constant lower back ache when doing any hip hinging exercises or weighted squats. πŸ€ΈπŸΌβ€β™€οΈ We have been working on strengthening her back muscles & core, building overall strength and stamina, and creating long term healthy habits around nutrition and exercise in general. Sarah has been so consistent and driven I am proud beyond words πŸ₯° I love to see my clients feeling confident in themselves as they get stronger, fitter and healthier.

PROUD MOMENT ✨ Sarah finally received her certificate and medal for the November charity challenge to raise funds for bone cancer research in which she completed 2,000 Burpees!!!

She wanted this to be fun and manageable as the thought of doing 60+ Burpees every single day seemed daunting. Soooooo I devised a fun 4-day burpee workout plan (with 3 glorious rest days) to go along with our group training strength sessions which she followed RELIGIOUSLY each week. πŸ€ΈπŸΌβ€β™€οΈ Sarah was disciplined, determined and consistent and this was evident in her burpee progressions. When she started she could only perform the easier variation (down to a high plank)... By the end of it she was doing 100 chest-to-floor Burpees with perfect form and great speed. πŸ₯³ She enjoyed it so much she is going to do it again in April, anybody else fancy doing it??????

What you see in the pictures: increase in glute size and narrower waistline.
What you don't see in the pictures: strength gains (Katie is hip thrusting DOUBLE the amount of weight she was when we started), improved flexibility and mobility, confidence in herself and so much more.

⭐ CLIENT SPOTLIGHT β€’ came to me 8 weeks ago with the goal of increasing strength and muscle mass (with an emphasis on the glutes) πŸ‘ can I just say WOW! This is what dedication, hard work, and consistency looks like and I am beyond proud!!! High protein vegan pasta 🀀
I received a few messages after sharing this vegan pesto tempeh pasta dish on my story yesterday so I thought I'd share the recipe (perfect excuse to make it - and perfect it - again today). πŸ€—
PER SERVING NUTRITION: I used brown rice & quinoa pasta (80g uncooked), 90g organic tempeh, 1/2 red onion sliced, 1 tomato cubed, chopped up parsley, 1tsp pesto, 1tbsp soy milk, 1tsp: paprika, garlic granules, and any other herb/spice you want to add. All for just under 500kcal and around 27g protein! I tripled the quantities to feed two other people and it was so filling and satisfying!!! (They agreed)

Method:

Add 2tbsp extra virgin olive oil to a hot non-stick wok (medium-high heat). Throw in the cubed tempeh and sliced red onionπŸ§…. Allow the tempeh to crisp up slightly before adding in the tomato,πŸ… psrsely, and herbs/spices. Once the onion is cooked through add the pesto and soy milk and reduce heat to a medium-low. Keep stirring constantly and add cooked pasta. Serve with some fresh parsley, cracked black pepper, and grated vegan cheese (I used oh, grate - I am nut ok). ENJOYYYYYY 😁

Excited for this colorful lunch by the lake tomorrow πŸ₯‘
Roasted 1 can of (drained and rinsed) chickpeas on one tray, then on the second tray I added 3 small sliced red onions, 1 sliced red pepper and 1 sliced yellow pepper. 🀀
Added a drizzle of olive oil, cumin, juice of 1/2 lime, garlic granules and a pinch of salt to the chickpeas. πŸ‹
Added a drizzle of extra virgin olive oil, mixed herbs and a pinch of salt to the onion and peppers πŸ§…
Waited for these to cool down after roasting and added chopped cherry tomatoes, avocado and some fresh coriander πŸ…
So simple and easy to do - perfect for a meal prep day (this will easily feed the three of us tomorrow) 😁

These vegan burgers are so easy to make and even more delicious πŸ‘©πŸΌβ€πŸ³
Ingredients:
- 2 cans kidney beans (drained and rinsed)
- 1/2 cup oats
- 100g tomato paste
- Cumin
- Garlic granules
- Fresh coriander (finely chopped)
- Salt
- Pepper
- Juice of 1/2 small lemon
Method:
1. Mash the kidney beans as well as you can into a thick paste
2. Add everything else and mix through
3. Divide into six even balls and shape them into burger patties
4. Bake in preheated oven (190degrees celsiu/gas mark 6) for 40mins turning them over halfway through
5. Serve and enjoy!
I served this with baked sweet potato and home made guacamole and it was spectacular!

Looking for a high protein, fresh and tasty meal? Then this is the one for you! Honestly guys, so so so good... I could not recommend enough 😁
Pork souvlaki inspired dinner (rather than skewers we just marinated the pork chops/medallions) served with salad, avocado and home made tzatziki. πŸ‘©πŸΌβ€πŸ³

FOR THE MARINADE:
- 1 lemon (juice & zest)
- 4 minced garlic cloves
- 2tbsp dried oregano
- 1tsp cumin
- handful of finely chopped mint leaves
- 2tbsp olive oil
- 1tsp turmeric (optional)
- Pinch of salt and pepper (optional)
- chili flakes (optional)
πŸ‹
- Marinade pork and leave for an hour (half an hour would be fine too if you are more rushed) before frying on a griddle pan (or BBQ if you can!)

FOR THE TZATZIKI:
- 1/2 large cucumber, grated
- 2 minced garlic cloves (one if you're not garlic obsessed like myself)
- Julie of 1/2 small lemon
- 1 cup (245g) full fat Greek yogurt
- 1/2tsp salt
- finely chopped handful of mint leaves

Mix it all through and add finely chopped coriander if you fancy (much like garlic, I'm obsessed with coriander which I know is an unpopular opinion so this is totally optional)
