Here’s how it started…
It was 3pm Tuesday, and the munchies hit HARD. I need something SWEET but FAST.

Then the brainwave hit, what if I just smashed a baked sweet potato, shoved on some chocolate chips, and air fried it for 5 minutes.

it transformed into a STEAMING, CHEWEY COOKIE!🍪

like fudgy, gooey, squidgy in the middle
soft, sweet, and genuinely tastes like a cookie.

I was just savouring the cakey goodness in my mouth knowing I was onto something… 😳

so now I’m committed (and curious)

Can I turn sweet potato into cookies for 20 days straight?

I know a wrap made out of potatoes sounds crazy, but trust me — it totally works 🔥 Potatoes are one of the best weight loss foods on the planet and so incredibly satisfying!

Fill it with all your favourites, but I’m a sucker for tofu tikka every single time ✨

Ingredients:

🥔 2 medium potatoes, sliced & soaked
🌾 2 tbsp chickpea flour
💧 2–3 tbsp water
🧂 Salt to taste
🧀 Nutritional yeast

Tofu tikka:

🧊 1/4 block extra firm tofu (frozen & defrosted for better texture)
🥣 2 tbsp vegan soy yogurt
🌿 1 tsp cumin powder
🌿 1 tsp coriander powder
✨ 1/4 tsp turmeric
🍋 1/2 lemon, juiced
🧂 Pinch of salt

Indian inspired sauce:

🥣 2 tbsp vegan soy yogurt
🌿 1/2 tsp cumin powder
🌿 1/2 tsp coriander powder
🍋 1/2 lemon, juiced
🧂 Pinch of salt

Extras:

🥬 Lettuce
🥒 Cucumber
🍅 Tomato

Method:

1️⃣ Slice potatoes nice and thin. Soak in cold water to remove excess starch, then pat dry. Lay them on parchment paper slightly overlapping in a wrap shape.
2️⃣ Mix chickpea flour, water, and salt, then pour over the potatoes. Sprinkle with nutritional yeast and bake at 180°C for 20–25 minutes until golden and cooked through, but not too crispy.
3️⃣ Tear tofu apart and mix with yogurt, spices, lemon juice, and salt. Bake or air fry for 20 minutes until crispy.
4️⃣ Mix the sauce ingredients, then fill your potato wrap with tofu tikka and your favorite extras ✨

I really wasn’t in the mood to eat a big pile of veggies for lunch, so instead I turned them into this epic GIANT savoury Asian pancake — and it honestly didn’t feel like I was eating veggies at all 🙌

I want to show you that veggies don’t have to be boring! ✨

Ingredients:

🥬 1 cup sliced cabbage
🥕 1 carrot, sliced
🍄 4–5 mushrooms, sliced
🧅 1/8 onion, sliced
🧄 1 big clove garlic, minced
🌾 1/2 cup plain flour
💧 3/4 cup water
🧂 1 tsp salt
🧄 1 tsp garlic powder
🧅 1 tsp onion powder

Easy Asian Sauce:

🥢 1 tbsp soy sauce
🍁 1 tsp maple syrup
🍶 1 tbsp rice vinegar
🥄 1 tsp miso
🧄 1/4 tsp garlic powder
🫚 1/2 thumb ginger

Extras:

⚪ Sesame seeds
🥬 Vegan kimchi

Method:

1️⃣ Slice all the veggies. In a separate bowl, mix flour, salt, garlic powder, onion powder, and water until smooth. Add the veggies and mix again.
2️⃣ Pour onto a good non-stick pan and spread out into one giant pancake. Cook for 5–6 minutes, flip, and cook for another 3–4 minutes.
3️⃣ Serve with the sauce and enjoy ✨
