Vegan β€’ Oil-Free β€’ Low Calorie Density

Ingredients:

🧊 1 box silken tofu
πŸ§„ 2 cloves garlic
πŸ₯› 1/3 cup soy milk
🍎 2 tbsp apple cider vinegar
πŸ§€ 1/4 cup nutritional yeast
πŸ§‚ 1 tsp salt
🌾 3 tbsp tapioca starch
πŸ§ͺ 1 tbsp kappa carrageenan (for firm balls)
πŸ… Tomato
🌿 Basil

How to make:

1️⃣ Blend all mozzarella ingredients until completely smooth. Heat on low, stirring constantly, until thick and stretchy.

2️⃣ Spoon about 1/4 cup onto cling film, twist into a ball, and chill in ice-cold water for 20 minutes until set.

3️⃣ Serve with tomato and basil for a light, high-protein Caprese. ✨
