It’s National Rum day......no I didn’t make that one up!
Why not celebrate by trying out one of these scrumptious desserts 🍹
🤩Rum, coconut and lime panna cottas with pineapple and crushed meringue🤩🍸
Take your taste buds to the tropics with these lovely and light individual puds
🤩Ingredients 🤩
⭐️4 sheets leaf gelatine
⭐️35ml dark or coconut rum
⭐️450g pot Müllerlight Greek-style Coconut & Vanilla yogurt, at room temperature
⭐️Zest and juice of 1 lime
⭐️200g fresh, or frozen and defrosted, pineapple chunks, finely diced
⭐️2 fresh mint sprigs, leaves picked and finely chopped
⭐️2 mini meringues, roughly crushed
🤩Method 🤩
⭐️Soak the gelatine in cold water for 3-4 minutes until soft. Remove the gelatine, squeeze out any excess water and transfer to a saucepan with the rum and 50ml water. Heat very gently, stirring, until the gelatine has completely dissolved. Remove from the heat and leave to cool slightly.
⭐️Mix together the yogurt and lime zest and juice, then stir in the gelatine mixture until completely combined. Divide between 4 dessert glasses, cover with cling film and chill for 3-4 hours, or overnight if possible.
⭐️Remove the panna cottas from the fridge 30 minutes before serving. Mix together the pineapple and mint, then spoon the mixture over the panna cottas. Sprinkle over the crushed meringue and serve.
