Vegetable patties are nothing new and come in many different varieties, but this time we added salmon to our potato ones! It's a real delicacy.
🐟 Potato Salmon Patties 🐟

INGREDIENTS:
3.5 oz (300 g) potatoes
7 oz (200 g) salmon fillet
2 egg yolks
1 tsp Dijon mustard
0.7 cups (60 g) rolled oats
½ tsp salt
½ tsp pepper
DIRECTIONS:
Heat oven to 355°F (180°C). Take large pot, fill halfway with water, and bring to a boil. Meanwhile, peel and dice potatoes. Add potatoes to boiling water and cook until done (15 mins). Drain potatoes, mash with a fork, and leave to cool.
Place fillet onto a baking sheet covered with baking paper. Put in oven. Bake for 7 mins. at 340–355°F (170–180°C). Remove fish with a fork. Put into a large bowl.
Mix with cooled mashed potatoes, egg yolks, mustard, rolled oats, salt, and pepper. Knead mixture with bare hands and form pastries. Place onto sheet. Bake for 20–25 mins. at 340–355°F (170–180°C).
TIP:
Serve with mixed salad greens, dressed with whole-grain mustard, honey, and lemon juice.
