DOUBLE BAKE VEGETARIAN CHILLI

So much love for my veggie dish wish I have to say is such a great winter warmer, so easy and so inexpensive.

INGREDIENTS

3 mixed peppers
3 onions
5 cloves of garlic
3 courgettes
1 fresh chilli - optional
1 large teaspoon chilli powder - or 2 depending on your taste buds
Drizzle extra virgin olive oil
3 tins tomatos
1 tin chickpeas
1 tin kidney beans
1 packet mushrooms - halved (I like chestnut)
Salt & Pepper - to taste
To serve
Large bunch of coriander - finely chopped
Grated mozzarella - couple of handfuls

METHOD
🌿 Roughly chop onions, peppers, courgettes, chilli and crunch garlic - add to a large baking tray and drizzle olive oil, salt and pepper
🌿 Cook for approx 40 mins - or until the veg are browning - you may need to stir half way
🌿 Add tinned toms, chickpeas, kidney beans & mushrooms - stir gently and add to an oven proof dish
🌿 Bake for a further 20 mins
🌿 Add mozzarella and cook for 5 mins in the hot oven - a little feta or parmesan would work equally as well and just gives the dish that little extra oomph
🌿 To serve - sprinkle coriander

This works so well with brown basmati rice, quinoa, baked potatoes or on its own!

To all the amazing women going through peri menopause & menopause let’s celebrate this day and beyond.

It can be a terrifying time with symptoms often being debilitating, overwhelming, frustrating and uncomfortable.

The only way you can make a difference to you and your body is start putting YOU first.

Don’t ignore your feelings / symptoms and by prioritising you and your beautiful bodies, you really can make a difference.

Whether it’s tweaks to your diet, changes to exercise routines or embracing HRT (or all 3), your bodies really will thank you for it.

I see so many women feel lost and confused. Share your journey with friends, family, experts or whoever makes you feel safe and loved.

It can be an amazing stage of our life that is absolutely liberating and empowering.

Use this opportunity to get to know yourself better than ever before and enjoy the journey that lies ahead.

As long as you put yourself first….wonderful things will happen.

Earlier this week, I was lucky enough to attend the launch of the grounding breaking report - ‘The Future of Perimenopause’.

One of the key points from the report is that a staggering 9/10 women fail to link symptoms to hormones & the peri menopause.

Sadly, I know a lot of women who would never think their low mood, anxiety, sleepless nights, poor skin, tinnitus, weight gain, forgetfulness were due to hormonal fluctuations that commonly occur in peri menopause. Instead blaming busy lives, family life & stressful jobs on their symptoms.

As part of my job as a Nutritional Therapist, I help women understand their bodies better than ever before so that they understand what is normal/what is not, identifying triggers to symptoms and help them understand how they can support their bodies as they grow and change.

The very first step in this process is providing an understanding as to what happens to our bodies, why/what it is that they can do to thrive + feel fantastic.

✨ Do you understand the changes that start to occur as your body is maturing??
✨ Do you understand that no one body is the same??
✨ Do you know what symptoms are linked to hormonal fluctuations??
✨ Do you put yourself first to ensure your body is balanced & thriving??

There is still a stigma to the peri + menopause - we all need to help change this. A woman in her 40s + 50s + beyond has the capacity to be sexier, more vibrant, more confident and happier than any other time of her life. It is an exciting stage of life.

September can often trigger a range of emotions which can throw us in all sorts of directions.

For some, it’s all about resetting and getting into a routine, for others it can trigger low mood and overwhelm that the summer is over and shorter days are coming.

However it affects you, remember that by focussing on yourself with the right foods, right routine, good sleep, positive thoughts and regular exercise will almost always make you feel healthier and happier…..

BALANCING YOUR BLOOD SUGAR LEVELS

Poor blood sugar balance can be absolutely debilitating. It affects your entire body and can cause hideous symptoms such as the ones above 👆🏻

Managing your blood sugar is essential for naturally supporting hormones, especially during peri + menopause. Avoiding extreme highs and lows will create a much more balanced body and will help you feel more energised, focussed, satisfied and much calmer.

Summer is in full force and time is precious.

I hear so many clients, friends & family members tell me they have no time for themselves during the summer holidays.

For me, moving my body is non negotiable - it forms part of my daily routine and gives me energy, perspective and my sanity.

The barriers we have to making time for ourselves is often in our head.

🤍 If working out is important to you, make it happen.

🤍 20 minutes is all you need to invigorate your body.

🤍 Make time for you.

🤍 Get up 20 mins earlier.

🤍 Schedule time in your day.

🤍 You never ever regret a workout + your body is always better for it.

On these hot days. Train early. Even just a early morning walk can set you up for the day. I promise.

SUMMER SURVIVAL - TOP TIPS☀️

It’s that time of year when the wheels can come off, routines fly out the window and holiday mode is in full swing.
Some of us don’t get de-railed by summer mayhem whereas some of us will find it hard to put ourselves first and will feel completely out of sorts and make some bad food choices which can affect mood, energy, sleep, skin vitality and increase hormonal symptoms.

Summer madness can lead to:

Mindless eating / Over drinking / Unplanned meals / Late Nights + poor sleep / Poor routines / Less energy / Mood swings / Anxiety + irritability / Self loathing

Sound familiar?

My top tips:

1. Meal plan for the week ahead - write it down, shop online + focus on what + how you want your week to look. DO NOT wing it it will lead to making the wrong food choices.
2. Protein with every meal (a palm size portion) - this will help satiety levels (stop picking + keep you fuller), it will help control blood sugar levels + help balance you through the day
3. Lots of green leafy veggies - ideally 3 large fist fulls - to boost energy levels + fill your day with lots of nutrients
4. Stay hydrated - dehydration can lead to energy dips, hunger, bloating + constipation - sip minimum 1.5 litres throughout the day
5. Fibre - eat lots of fibre rich foods to help your bodies stay regularly + prevent bloating - I love kiwis, raspberries, strawberries, flaxseeds, legumes, cruciferous veggies + whole grains
6. Focus on one thing - it’s easy to let your hard work & routine go out the window. Choose one thing as your summer indulgence instead of 10 - you have the power to put you + your body first.
7. Move your body - have a routine, do something you love each day + commit to it - exercise is a form of therepy & often gives inner + outta strength - swimming, walking, gardening, running, zoom classes

By sticking to my 3 balance meals + a good exercise routine, my body is happier, I sleep better, I don’t have unwanted bloating, my skin is fresh + I help manage my crazy hormonal imbalances.

Just because the summer is here, it doesn’t mean you have to let everything go. You’ve got this 🙌🏻

💕 Menopause + You - no one journey will be the same 💕

It absolutely fascinates me how no one body is the same + how each of us will have a completely different journey through the menopause.

I’ve been talking to my mum about her experience and to my surprise, she didn’t have a single symptom. In fact, she didn’t know it was happening.

For me, I’ve been experiencing brain fog, anxiety, blood sugar imbalances, poor sleep + heavy heavy periods.

I do wonder if my symptoms are exacerbated by my lifestyle and the bumps I have experienced over the past few years???

Either way….this a classic example of how no one body is the same.

We must therefore listen to our bodies. Nourish ourselves with the right foods. Practice the right exercise regimes. And do what feels right for you.

With the wealth of information available on peri + menopause - there has never been a better time to educate ourselves and invest in nourishing our bodies from inside out.

IS IT HAPPENING TO YOU?

If you’re a woman in her early 40’s/50’s, experiencing any of the widely talked about peri/menopausal symptoms….it is highly likely that you hormones are changing.

Most woman think of the menopause as no periods - which is of course is true, BUT……peri menopause starts before periods stopping and can manifest in many ways. No one body is the same and each of us will have our own journey.

The MOST important things you can do for yourself is:

1. EDUCATE yourself - if you have a noticed a change in your mood, energy, skin, gut, cycle, sleep (amongst other things) & you are in 40’s/50’s it will most likely be because your hormones are changing. Read up & get ahead with your understanding of the female body and how it changes with ages. We will all go through it, so getting best prepared so you can understand the stages ahead, makes for a much easier journey.

2. EAT the right foods - most of us will have winged it once or twice (!) in our life with no impact on our bodies at all. As our bodies mature, the more sensitive and responsive they are to change. Nutrition plays a huge role in balancing your bodies and helping to manage unwanted symptoms. I work with wonderful woman every day helping them tweak their diets for optimal health & wellbeing. It really does help.

3. EXERCISE - as oestrogen drops so does bone density & muscle mass. Find a way to move your beautiful bodies and make it a regular thing. Exercise gives you energy, feel good endorphins and helps manage unwanted symptoms.

4. EXPERTISE - do not do this alone. Seek expert advice from either your local GP or a specialised private doctor who will be able to prescribe you with the right HRT. Don’t delay supporting you and your amazing body.

Of course, this is just the tip of the iceberg……the bottom line is there is so much support, help, advice and love out there. Don’t feel you have to do this alone.
