Pesto Egg Muffins! Italian inspired pesto egg muffins with cherry tomatoes, spinach and pesto are a great weekend breakfast. It's a protein and veggie based way to start the day! Dive on in! ❤️
⁠ ⁠
Ingredients.⁠ ⁠Serves 1
2 eggs
2 cherry tomatoes, chopped
Small handful of spinach, shredded
Pesto - approx 1/2 tsp for each muffin
Serve with spinach and tomatoes

Method⁠
1. Preheat the oven to 180°C. Prepare a muffin pan - 2 eggs make 2 muffins so lightly spray oil into 2 muffin 'spaces'
2. Whisk the eggs together and season with salt and pepper
3. Pour the egg mixture halfway up the space in the muffin pan
4. Add one chopped cherry tomato to each of the egg mixtures together with some shredded spinach.
5. Add approx 1/2 tsp pesto to each muffin
6. Bake in the oven for about 20-25 minutes until a skewer comes out clean of the muffin
7. Serve and enjoy!

Breakfast smoothie packed with protein, fibre and omega 3 to kick start your digestive system and start your day well. Dive on in! ❤️

Ingredients.⁠ ⁠Serves 1
1/2 banana
1 tbsp oats
2 tbsp ground flaxseed
1 tsp almond butter
1tbsp yoghurt - I used greek
1tbsp chia seeds
1tsp honey
1 tsp cinnamon
1/4 cup water
1/2 almond milk
1 cup ice

Method⁠
1. Add all the ingredients to a blend and blend. I find with the ice I need to 'jiggle' the blender around, or stop, give it a shake and then blend once again.
4. Serve and enjoy with the other 1/2 banana on the side!
