I know, it’s either love or hate, but this is a super-flexible food that can be used for savoury as well as sweet recipes. Try it as a carpaccio, raw in salads, baked or in a smoothie.
Beetroot rosette on herby ricotta
Thinly slice 1 large beetroot with a sharp knife or mandolin. Season with salt and pepper and drizzle with olive oil. Mix 70g ricotta with a handful of fresh herbs (chives, parley, coriander), a pinch of salt and pepper and a touch of olive oil. Put the ricotta into a small bowl and shape the beetroot slices into a rosette. Arrange on top of the ricotta and decorate with mini herbs or pea shoots if you really want to show your love!
