Since there have been some new followers on Wellude_healthcoach, I thought it might be best to introduce myself. So, here it goes: I'm Ioana, I'm a certified Health and Wellness Choach, and I help people regain their energy, shed a few extra pounds and overcome burnout. This is the kind of food you make when you want to get rid of stuff from your freezer and don't want to waste any food. I had a veg mix laying there for quite some time, some sad organic tofu in the fridge, and a can of coconut milk. I sauteed some grated ginger and garlic in a bit of coconut oil, then added my tofu which had been tossed in some masala spice mix, followed with the frozen veg and half a can of coconut milk. It took about 10 mins to put everything together and lunch was solved. Bonus, I get to add the remaining coconut milk to my turmeric lattes in the evening. Win!
