I had one of those fishy cravings and it needed to also have the crunch of the skin too...so my trusted rice paper did it's magic!๐ŸŸ๐Ÿ 

Ingredients
For the tofu:
1 block firm tofu, pressed and drained
Rice paper sheets
Water for soaking the rice paper
Seasoned flour coating:
1 cup chickpea flour
1 tsp garlic powder
1 tsp smoked paprika
ยฝ tsp cayenne pepper
Salt
Avocado oil for frying

Instructions:
1. Press the tofu firmly between clean towels or paper towels for at least 10 minutes to remove excess moisture.
2. Combine the flour with seasonings and mix well
3. Fill a shallow dish with warm water and dip a sheet of rice paper for about 5โ€“8 seconds, just enough for it to soften
4. Place the rice paper over the block of tofu and. fold the sides in and roll it up tightly, like a spring roll. Press the sides down to seal.
5. Dredge the wrapped tofu in the seasoned flour, on both sides
6. Fry the fillets
7. Heat some oil in a frying pan and place the tofu in the pan. Fry for aboud 5 to 6 minutes each side or until golden brown and crispy.

Enjoy your vegan fish with some chips, rice or a sandwich!
