I first discovered back in 2016 on YouTube, while searching for healthy homemade snacks. I’ve followed her journey ever since and watched her and her brand grow. She’s one of the few people I follow who’s stayed truly integral and transparent, always sharing the highs and lows of being a female founder in the food industry, making plant-based foods with natural ingredients.
Her energy balls were the go-to recipe from 2016–2019, also the first product she launched. Since then, she’s created even more products, cookbooks, and an app full of recipes (some of which I’ve cooked for retreats!).
When I saw her last Saturday, just a few metres from me, and then actually got to speak to her, it felt surreal. A dream come true, filled with so many emotions.
I found in 2020, not long after qualifying as a nutrition coach, when I was still finding my feet in the field. It didn’t take long to see how committed she is to making nutrition science accessible and myth-free. She quickly became my go-to whenever I felt confused by the science and I can honestly say she shaped the foundations of my knowledge.
When I met Rhi last Saturday, I was so nervous. She asked my name, and when I said Catalina, she asked if I was Spanish. When I told her I was Romanian, she greeted me with “nice to meet you” in Romanian 🥹, such a lovely, touching surprise from someone I deeply admire.
And their podcast The Wellness Scoop? It’s become my anchor. A reminder that the work I do with clients matters and has value.
I loved every moment of this extraordinary experience and I’m already looking forward to the next one. 💓
