Lamb Madras Curry with Rice .

Ingredients:

1.5 lbs lamb shoulder, cut into bite-sized pieces

2 tablespoons vegetable oil

1 large onion, finely sliced

4 garlic cloves, minced

1 tablespoon fresh ginger, grated

2 teaspoons cumin seeds

1 tablespoon ground coriander

2 teaspoons turmeric powder

2 teaspoons chili powder (adjust to heat preference)

1 teaspoon paprika

1 tablespoon Madras curry powder

1/2 teaspoon ground cinnamon

1/4 teaspoon ground cloves

1 tablespoon tomato paste

1 cup crushed tomatoes

1 cup water or beef broth

Salt to taste

Fresh cilantro, chopped (for garnish)

1 cup basmati rice

2 cups water

1/2 teaspoon salt

Optional: a splash of coconut milk for creaminess

Directions:

Heat oil in a large saucepan over medium heat. Add cumin seeds and toast for 30 seconds until fragrant.

Add the sliced onion and sauté for 8–10 minutes until deeply golden.

Stir in garlic and ginger, cooking for 1–2 minutes more.

Add coriander, turmeric, chili powder, paprika, Madras curry powder, cinnamon, and cloves. Stir well to coat the onions.

Add tomato paste and crushed tomatoes, cooking for 3–4 minutes to deepen the flavors.

Add lamb pieces, stirring to coat them in the sauce. Cook for 5 minutes, then pour in water or broth.

Bring to a simmer, cover, and reduce heat to low. Cook for 1.5 hours, or until the lamb is tender. Stir occasionally, adding more liquid if needed.

In the last 15 minutes, prepare the rice: rinse basmati rice well, then combine with water and salt in a pot. Bring to a boil, reduce heat to low, cover, and cook for 12–15 minutes until fluffy.

Once curry is done, adjust salt and stir in optional coconut milk for richness.

Serve lamb Madras curry hot, garnished with cilantro, over steamed basmati rice.
