Rainbow Salad with Chipotle Dressing

For the salad base I used 1 Head of Romaine Lettuce chopped
On top I arranged :
Cauliflower
Yellow Pepper
Carrot
Tomatoes
Red Pepper
Radishes
Purple Cabbage
Red Onion
Green Cabbage
Cucumber

Dressing
4 Pitted Medjoul Dates
1 Lemon juiced
1 Tsp Smoked Pepper
1/4 Tsp Chipotle Pepper Flakes
Garlic
Black Pepper
Pink Himalayan Salt
1/2 Cup Water
Blend it well until smooth
Serve with your salad and enjoy.

Lemons 🍋🍋🍋

Every morning I start my day with drinking four glasses of water with some lemon juice.
I squeeze juice from two lemons and keep it in a small jar in the fridge. I use half of it with my morning water and other half I add to my salad dressing in the evening.
Since I have been drinking lemon water I feel more hydrated and awake in the morning.
Leave at least 15 to 30 minutes before you eat anything.
Lemon water on empty stomach makes wonders to your cleansing.
Try for yourself.
Makes drinking water easier.

Time for Pad Thai

This is one of my favourite raw meals and I often make it over and over again.
It is a tried and tested, delicious recipe with crunchy, juicy texture and that peanuty flavour. Give it a try!
For the salad:
1 Large courgette spiralised
1 Carrot spiralised
1/2 White Radish. (Mooli) spiralised
1 Cup Beansprouts
1 Cup Shredded Chinese Cabbage
1/2 Cup Chopped Coriander
3 - 4 Spring Onions Chopped

For the dressing :
1 Orange juiced
1 Lemon juiced
1 Lime juiced
6 Medjol Dates pitted
1 Tbsp Tamari or Nama Shoyu Sauce
1 Garlic Clove or powder
1/2 Red Chilli pepper
1 inch fresh Ginger
2 Tbsp Smooth Peanut Butter
Blend all ingredients well in your blender and pour onto your salad. Mix well and enjoy. 😋

Glorious Cucumbers 🥒

Today, I call myself lucky! I found some small cucumbers for pickling. Not easy when you live in London. I got them in my local Polish shop.
I am making traditional pickled cucumbers with garlic, Dill, Horseradish root and spices.

Delicious Apple Sauce

This is a very tasty pudding.
Kids absolutely love it too.

3 Sweet Apple
2-3 Pitted Medjoul Dates (optional)
1/2 Tsp Cinnamon

Blend all ingredients together in a powerful blender like Vitamix.

Simple the Best
Mixed Salad with Lemon Dressing

1 Romaine Lettuce
2 Celery Stalks
2 Tomatoes
1 Cucumber
1/2 Red Pepper
1/4 Red Onion
4-5 Cauliflower Florets
5 Radishes
Chop all ingredients, place in the bowl and mix with the dressing.

Lemon Dressing
1/2 Cup Water
1/2 Lemon Juiced
1/2 Garlic Clove
3-4 Pitted Medjoul Dates
Blend until smooth.

Mix all together and enjoy!

Beautiful Peonies 🌸

I usually only post pictures of food items, but today I have been enjoying a wonderful fragrance of my favourite flowers - peonies.

When I bought them two days ago, they were only few tiny buds and I didn't even know if they were going to open up.
Today my whole kitchen smells fabulous.
I love ❤️love fragrant flowers.

My favourite flowers are lily of the valley, lilac, peonies, freesias and roses.

One Day Pickles

I love, love ❤️ pickled baby cucumbers.
A traditional Polish way is where cucumbers are brined in salt water, garlic and herbs.

This is my cheat way of quickly creating delishes pickled cucumbers, ogórki małosolne. Fully Raw and good for you.

I live in London and it is hard to get small cucumbers. No problem. I have found my way.

2 - 3 Long Cucumbers, deseeded and cubed
1 plastic bag with a zip lock or similar, tight closing
1 Tsp Salt
Black Pepper
3 Garlic Cloves cut in pieces
1 Bay Leaf
4 Peppercorns
Few Horseradish shavings
Half bunch of Dill

Chop your cucumbers and put in a bag. Sprinkle with salt and herbs. Close your bag and massage really well cucumbers with salt and herbs. Put in the fridge.
Every hour or two, take out of the fridge and massage your cucumbers again.
It usually takes 12 hours to develop a great flavour.
If not ready, leave overnight.
They taste just like young pickled cucumbers in brine.

Oriental Salad

Today I have made a flavoursome salad with an Oriental dressing.
For the salad:
1/2 Romaine Lettuce sliced
1/2 Chinese Cabbage thinly sliced
1/2 Cucumber
Handful Radishes
Handful Sliced Mushrooms
1/2 Small Red Onion
1 Small Red Chilli Sliced
Pinch of White and Black Sesame Seeds

Dressing :
3 Medjol Dates
1 Tbsp Tamari
1 Tbsp Tahini
1 Tbsp Apple Cider Vinegar
Garlic
Thumbnail of fresh Ginger
Little bit of water
Blend well all ingredients until smooth and pour over the salad. Leave for 10 minutes for the flavours to infuse.
Enjoy!

Raw Carrot and Horseradish Side Salad
Surówka z Marchwi z Chrzanem

Experimenting with traditional Polish raw salads. My mum used to make it on Sunday with our dinner.

4 Carrots grated finely
1 - 2 Tbsp grated Horseradish
1/2 Lemon juiced
1 Tsp Agave Nectar
Pinch Himalayan Salt
Pinch of Black Pepper

Mix it all together and leave in the fridge for minimum 30 minutes.

1/2 Yellow Pepper
2 Celery Ribs chopped
Kalamata Olives
Dressing
4 Medjool Dates
1 Lemon Juiced
Garlic
Mixed Herbs
1 Tsp Raw Mustard
1/2 Cup Water
Himalayan Salt
Black Pepper
Blend all ingredients and pour over the salad.
Mix well. Decorative with raw Olives.

My Story begins with me battling weight problems since my late teens. I have been on every diet under the sun, lost weight many times and gained everything back and some more. I felt helpless, unhealthy, depressed and hated myself for being unable to make a change. I longed to be slim, wear a bikini on the beach and enjoy my life in full. My best friend started the Cambridge Weight Plan and she told me how good she felt. I went to see my Consultant three days after and went straight on the plan. Within four months I lost 20kg (3 and 1/2 stone*) and five dress sizes. I could not believe how easy it was. But most importantly for me I have been maintaining the weight since. No more yo-yo dieting!

I am based in Clapham South but cover most of South West London including Balham, Battersea, Clapham, Brixton, Earsfield, Norbury, Streatham, Thorton Heath, Tooting and Wandsworth.
