Why I Use Lemon Marinades for My Fish

If you see me cooking fish, just know lemon is involved.

Here’s why I always marinate with lemon:

It naturally reduces that strong “fishy” smell
It tenderises the fish gently
It adds brightness without needing heavy sauces
The vitamin C helps your body absorb iron better when paired with greens

And honestly, it just tastes fresh and clean.

Mindful Mondays

Let’s get into my Lunch Booster.

This week I’m choosing fuelling smoothies instead of grabbing whatever’s closest at lunchtime.

Today’s mellow yellow lunch booster is packed with pineapples, mangoes, kefir and banana, topped with coconut shavings.

Natural sugars for quick energy.
Probiotics for my gut.
Healthy carbs to carry me through the school run and emails.

Because skipping lunch isn’t strength, it’s stress on the body.

Slow Sundays don’t have to mean heavy meals.

Tonight was light but satisfying, homemade lamb burgers, crunchy coleslaw and garlic potatoes.

Protein to keep me full.
Fibre for my gut.
Comfort without the food coma.

Busy week ahead, so I’m fuelling with intention, not just eating whatever’s quickest.

Empty calories are foods that give you energy but little nourishment.

High sugar, low fibre.
Quick spike, quick crash.
Still hungry shortly after.

Think sugary drinks, ultra-processed snacks, and heavily refined treats.

Today I chose better fuel.

A wholesome blueberry smoothie, naturally sweet and antioxidant rich.
Shallow fried plantains, chilli sweet potatoes with sautéed chives eggs, carbs for energy, protein for fullness, healthy fats for balance.

Simple rule, if it keeps me full and steady, it stays. If it spikes and crashes me, I swap it.

Small daily swaps make a big difference for busy mums.

Sweet and salty corn
Cashew, cocoa and orange chewy bar

Just balanced enough to stop the crash.
Can we normalise mums eating before we hit breaking point?

Midweek meal but make it vibrant!

Carrot and red pepper spiced couscous,
tarragon sriracha saucy chicken wings,
and a fresh beet leaf salad on the side.

Sweet, smoky, herby, a little fiery… the kind of meal that feels fancy but comes together without stress.

Because feeding your family well doesn’t have to mean complicated. It just needs colour, flavour and intention.

Busy day, full plate, still choosing nourishment. That’s the balance. xx
