The sun is shining, it’s getting warmer and it’ll soon be time to fire up the BBQ and you know what that means!? Burger time. Here at Bottlebrush we’re all about healthy eating but we still love a good burger and to be honest it’s possibly one of my favourite ways to eat fermented foods. Whether you go for a sauerkraut or kimchi, they make the perfect burger topping. They taste amazing, cut through the grease and add an intense hit of flavour. Get some on your favourite burger. Could there be an easier way to eat our kimchi!? I think not. Yesterday’s lunch at Queens Park Market was gyoza with a side of - considering I didn’t have to cook the gyoza myself, this was a quick and delicious lunch. Our are great as a side to Asian inspired dishes as well as salads, Buddha bowls, brunch or even grilled cheese on toast. How do you like to eat it?

in the news - This one is courtesy of featuring Kathleen McAuliffe and focuses on the guts role in signalling to the brain and the body for them to perform their many vital and complex functions. This quote summed it up well. “Half the cells in your body do not contain your DNA. they belong to bacteria, Protozoa, fungi and other unicellular creatures. These tiny tenants, collectively known as our microbiota are most abundant in the gut where they aid digestion and carry out many other essential functions, but most amazingly, they talk to your brain.” McAuliffe later goes on to say that this two way communication network via the Vagus nerve actually flows 80% from the gut to the brain and only 29% from the brain to the gut which is the reverse of what was originally hypothesised. This communication to the brain influences mood, memory, energy, focus, appetite, sexual function, cravings and even your personality. Pretty profound stuff.

Another featuring our fabulous ferments. Don’t overthink it. It doesn’t always have to be a full meal, here we’ve chosen to use it as a side with some lovely cheeses and other bits and pieces. Think of our and as a healthy alternative to a traditional chutney or pickle. They’ll add colour, flavour and will up the health quota.

in the news. Saw this article in and whilst I’m not on (perhaps we should be) it seems that gut health is trending big time on their platform - 3 billion odd views. Not bad. The article is actually pretty critical of the many so called experts and gut health influencers who are promoting a lot of junk science and in some cases giving advice that could actually be harmful. I was glad to see at the end that legitimate specialists in the field all agreed that gut health is not a fad, is incredibly important to overall health and well-being and that (as mentioned in my last two gut health tips videos) eating more plant based fibre in the form of veg, fruit, nuts and seeds and including fermented foods in your diet is a great way to boost your gut health. 👍🏼

A bit of meal for ya. One of the easiest ways to use our ferments is as an accompaniment to your meal. It does the job of a chutney, relish, pickle or as seen here as an addition to a salad, Buddha bowl or Poke bowl. We love colour so add it some greens, beans, seeds, hummus, throw in some avo, chicken, meat and fish and you have a meal that ticks multiple boxes. Macros ✔️ micronutrients ✔️ fibre ✔️ antioxidants ✔️ probiotics 🦠 ✔️ and perhaps even more importantly quick ✔️ delicious ✔️ healthy ✔️

in the news. Well, not technically in the news. This was from (The British Medical Journal) one of the worlds oldest peer reviewed journals. After noting favourable results in animal studies of the anti-obesity effects of Kimchi, researchers decided to test their hypothesis on humans and enrolled over 115,000 Korean Adults to participate in this cross-sectional study over a 9 year period. Results showed that consuming 1-3 servings of Kimchi per day was related to a lower prevalence of obesity and more importantly lower levels of centrally deposited abdominal fat. Get eating folks!

The humble toastie. Is there anything better!? Quick, filling and absolutely delicious if you do it right. Here we have a simple cheddar cheese toasted sandwich with some lovely sourdough bread made even better by adding our incredibly tasty and versatile Kimchi. Melted cheese and butter, great bread and then contrasting sourness and spice from our kimchi. Hmmmm I’m hungry.
