Writing about what is going on in my life, the good & bad is something that has helped me on my journey to wellness.

I am still coming to terms with the quiet periods I go through but I am accepting them as a part of my way of managing my recovery.

Listening & reading about other peoples experiences is a huge help on my healing & I hope to be able to help just one person with sharing mine.

Sweet & Sour Chicken 😍

Battered chicken with an unbelievable sweet & sour sauce that tastes like a Chinese takeaway! 😮‍💨 And it’s half the calories 👀

Shopping list:
- 2 chicken breasts, diced
- Salt & pepper
- 1 egg
- 30g cornflour
- 1/2 red pepper
- 1/2 yellow pepper
- 1/2 small onion
- 80g fresh pineapple
Sauce: 1 tsp White Rice Vinegar, 4x tbsp Tomato Ketchup, 1 tosp Soy Sauce, 1 tsp Sweetener or sugar & 1 tbsp Water

Method:
Mix the sauce ingredients together and set aside. Season the diced chicken with salt and pepper then dip into whisked egg then the cornflour. Place in the air fryer, spray with low calorie spray and cook on 190C for 5 mins each side. Spray again after you flip if needed.

Remove the chicken then place the onions, peppers and pineapple into the air fryer and cook on 200C for 5 mins.
Pour in the sauce along with the chicken and cook for a further 2 minutes. Place onto your flatbread along with diced spring onion and enjoy!
