For decades, we searched for a single culprit.
Fat.
Cholesterol.

In the 1980s, we were told to fear fat.
So, we removed it.
And replaced it with carbs and sugar.
Low-fat biscuits.
Low-fat desserts.
Low-fat processed foods.
What actually happened?
โ€ข Blood sugar spiked
โ€ข Insulin levels rose
โ€ข Weight increased
โ€ข Metabolic health worsened
At the same time, obesity and diabetes rates soared globally.
So, hereโ€™s the uncomfortable question:
Did we solve the problemโ€ฆ or make it worse?
Sometimes in medicine, removing the wrong thing creates a bigger problem.

Saturated Fat & Heart Disease (Part 8/15)

It often doesnโ€™t happen all at once.
It starts quietlyโ€ฆ
You feel a bit hungrier
You eat slightly more
The weight creeps up
And then something changes.
What follows is what I call the metabolic domino effect:
Increased appetite
Excess calorie intake
Weight gain
Insulin resistance
Chronic inflammation
One step leads to the next.

Finding cholesterol inside artery plaques led scientists to blame cholesterol.
